Week of August 29, 2022 Small World Seafood Update
You guys blow me away!! I don't know which I am more impressed with. Your cooking skills or your photography! Check out our Insta to see what others have been making. Stellar stuff. So proud of all of you for taking risks, trying new things, getting out of your comfort zones. I know it doesn't mean you'll fall in love with everything you try but for even the things you don't care for, remember what I ask my kids to say. "I don't care for this....yet....." And then you try again later.
Aaanyway, this is the unofficial last week of summer! Labor Day is next week. I am so proud of this country for honoring all the women who gave birth to all the babies that became us and other people. To all of you who remember going through the process of birthing, we applaud you with a Happy Labor Day!
Okay, let's get back to fish! I love the end of summer, seafood-wise, because lots of good things can come around. The first feature we will have this week is a total crowd favorite. Fresh lobster meat! Yes, more fresh cooked claw and knuckle meat from out favorite producer up in Nova Scotia! Get your lobster rolls on! Or pastas or risottos, or omelets...And guess what? The price dropped some from the last time we sold it! Woo hoo!! $40 a pound, baby!
Also from our friends from Nova Scotia, fresh halibut fillet!!! This is definitely up there as people's favorite along with tuna and salmon. This fish is usually sold in high end restaurants for $36-$48 per portion. You get 2 pounds (enough for 4-5 people) for $38! You can check out a recipe we posted for searing off perfect halibut the way a restaurant would make it. Get this skill down. Great for thicker fillets. And don't forget our Bibou butter for the halibut or lobster meat..
One more feature is on the frozen side. We always get sampled on frozen fish but are extremely picky. Extreeeemely picky. We love our frozen cod. We loved the frozen barramundi we sold a few weeks back. We also love a product we think you will love too. Grouper chunks. Now, we haven't seen grouper around because the price has been through the roof for the past two years. However, within the process of filleting and freezing grouper, there is always a little trim that gets generated and this is discounted in price. Well, in my book, this stuff is gold! First of all, they are individually frozen so you can take out as many as you want without thawing out a whole block. Secondly, these little babies make the best fish tacos! They also are super easy to dredge and pan fry and lay out on a platter for people to help themselves. Good stuff!
Our usual delicious Faroe Island Salmon is with us. Sushi grade and, well, you all say it all the time, the best salmon ever. Who can ever buy supermarket salmon again?
Hokkaido scallops are with us this week. Sushi grade as well plus sear up perfectly. Check out recipe for hoe restos do it on our website.
Mussels are the shellfish of the week. Oysters will be Black Magics from PEI. We have one or two special features coming your way but have to wait to see what falls out of the tree.
Oh, and the price of shrimp has gone down so we bring it down too! Fuck inflation! So stock up on the good stuff for holiday shrimp cocktails!
