Well, we pulled out all the stops this week going into Labor Day weekend by getting the good stuff!! Well, actually, it's more like the stars aligned and we just happened to be looking up in the sky. So we take advantage, right?
We have a beautiful batch of fresh cooked claw and knuckle lobster meat coming your way!! Everyone has been so ravenous for it the past couple of time s we've sold it. I mean, how friggin good is it and you don't have to cook a live lobster or anything!
And just so you know, when you cook up a whole Maine or Canadian lobster, you only yield 20% meat. Meaning, if we work backwards, at $40 per pound of meat, it's like you are paying $8lb for whole lobster! Or put another way, 1 pound of lobster is generated from 5 pounds of whole lobster. Got it? Brain hurt? Here's more math. You can make 5 lobster rolls from one pound or $8 each! That's easy to understand..
And we also have fresh halibut from Nova Scotia!! East coast halibut is more refined than it's west coast cousin. Trust me. This fish is fine, indeed. Also a top favorite for so many people. This is the kind of fish that sells in expensive restaurants for anywhere from $36-48 per portion. Well, you get 2 pounds for $38 and you can feed 4 people!! Now, that's what I call a good buy. We may only get one more shot at halibut until next spring (or maybe not) so, as i like to say often, take advantage!
We have more pasteurized crab meat this week! Both Jumbo lump as well as lump! Really excellent stuff from a great supplier. Both come in cans and need to be refrigerated and both are good til 2023 so plenty of time to tap into them.
Lots of beautiful Faroe Island salmon still coming our way. You know, the business of getting high quality seafood is so much about relationships. And we love the direct relationship we have with Hiddenfjord. This is a small family owned salmon farm that uses no antibiotics, no hormones. They do things right and you can taste it. Sushi grade and all.
Hokkaido scallops are plentiful this week. The perfectly searable scallop with the perfect sear. These things, oh my.
On the frozen side, we have these beautiful 2oz grouper fillets coming to you in 2lb bags. Grouper prices have been through the roof for two years and untouchable. These are small fillets at 2oz, yes, but you have to think out of the box sometimes. These will be great for fish tacos. They will be great dredged with an egg wash and panko and pan fried. How cool to do a whole bunch of these on a platter and a dipping sauce like our cocktail? Grouper fingers!!!
The special feature items we were hoping to get for this week won't make it so we'll have to wait til next week for that. On the bright side, September will be fun...
Shrimp prices have notched down as touch. Yay!
Mussels are the shellfish of the week. Oysters are Black Magics from PEI. Small but meaty and super clean in taste.
