September 28, 2022 Fairmount/444 N 4th St Only Order Form (Copy)

One hurricane going one way, a second going another. The seas are churning. I hope everyone will be okay. These systems do affect do affect fish and fisheries. PEI is practically shut down for mussels harvesting due to the effects of hurricane Fiona. Ian will cause all kinds of ocean surges and swelling up the Eastern seaboard for the next week or so. And the world keeps spinning...

Aanyway, we have some really beautiful fish for you guys this week! First up is some beautiful branzini from Greece!!! We will be selling them 2 per order and you will have a choice of either head ON, scaled and gutted or head OFF and boneless. Either way, great for a the grill or roasting in the oven. They freeze extremely well, fyi, so you can stock up..

Next up is a fish we only see two or three times a year in these parts. Wahooooooooo!!!! Wahoo, also known as Ono in Hawaii, is a fantastic fish that is firm in texture but does have some velvety flakes to it. It takes amazingly well to marinades such as our miso glaze but also loves a soy-honey ginger thing too. Also, you can eat it raw. Yup, it is sushi grade and makes a kickass poke bowl, Hawaiian style!!! We leave the skin on to hold everything together when you cook it but you can remove it afterward or eat around it. Leave it on, though, if you are cooking it. It really keeps a lot of the moisture in...You can use recipes for swordfish and halibut for this. Any thicker, denser fillet.

Plenty of beautiful Faroe Island salmon fillet around this week once again from our friends who produce the finest salmon. No antibiotics, no hormones, open waters. They do it the right way. Oh, and it is sushi grade...

Speaking of sushi grade, have you tried our Hokkaido scallops? You should. They sear up perfectly and can even be eaten raw!!!

We will have gefilte fish for the last time this week. 20oz frozen logs that need to be cooked. Super easy though. If you like gefilte, stock up. No more til Passover...

We have pasteurized crab meat in both specs. Jumbo lump or Lump. Both delish. Octopus is back to get your Greek meal on with that and branzini..

On the smoked fish side of things, plenty of smoked salmon and whitefish salad for break-fasts next week plus we brought in some smoked trout and have another batch of smoked tuna spread. Yum!!! Also, think of all the things you could do with marinated fish like anchovies and sardines. And our dill herring? Best in class...

Littleneck clams will be the shellfish of the week once again. Oysters are Savage Blonds from PEI. They made the last truck out of dodge last Friday. Plenty of fish cakes and shumai.

All the other usual suspects are around as well so have fun, take your time, hurry up and get your order in!

Here is the order form. Bring a bag! Bring a bag! Bring a bag!
