Love seeing the seasonal shift of things. Coming up on the end of halibut season and tunas are making their way south crossing the beloved state of New Jersey right now. So, I know it's a dilemma but both are freezable. Wrap each piece in plastic wrap, lay flat in your freezer so they freeze quickly and then you can bundle them into a zip lock. That's the way to do it.

So, east coast halibut first! There is halibut on the east and west coast but my preference has always been for the east coast fish. Lighter, flakier and just elegant. This fish is one of the most expensive fish you will find on restaurant menus selling for anywhere from $38-56 per plate. You get 2 pounds for $38 and can feed four! This is likely that last big shot we will see until the spring so if this is one of your faves, stock up. We have a great recipe on the website for how pros cook up thicker fillets like halibut. Great technique to learn...

And how doesn't want sushi night on the weekends? Well, some gorgeous tuna from Jersey fishermen have hit the docks and we are stoked about it. Sushi grade yellowfin (Ahi) tuna. Some of you think of tuna coming from exotic places but for those who have bought from us in the past, you know how fresh the local stuff can be. Tartares, crudos, sushi rolls, whatever. And we will also have some restaurant grade nori sheets available too. Grab some unagi, our ponzu sauce and have a feast!!!

And speaking of sushi grade, our gorgeous Faroe Island salmon is perfect for sushi or pokes and will melt in your mouth roasted up. You can buy whole sides as well now which is pretty cool if you want to wow your guests...

Same with our Hokkaido scallops. Sushi grade, perfect sear every time...just yum!

Mussels are the shellfish of the week. Oysters of the week are Shipwrecks from PEI. Plenty of smoked and marinated fish. Don't forget your stocks and sauces too!
