Well, last week went great! The whole process worked well without a hitch. We got so much feedback from those who did order and we are so glad you like everything!
Now that we got the first week under our belts, we are confident that we can open this up to new people. I had asked you not to tell anyone at first. Well, go ahead and tell people. Actually, let me modify that. Tell people that you like. You can forward them this email for them to order and ask them to go to the main website so sign up for future emails.
So, we are going to do a few fun things just for you guys this week. We had a beautiful shot of yellowfin (Ahi) tuna come in this week and so many people in the city took advantage. This is sushi grade and, well, really good stuff. We blast froze some for you guys so take advantage. We have some great recipes on our site for tuna tartare, sushi rolls, crudos, etc. I tell you what, muuuuch cheaper than ordering this stuff out...
Also, with Rosh Hashanah upon us, we featured gefilte fish. Now, this isn't your jarred and bottle kind. This is the really good stuff from Raskin's in Brooklyn. It comes frozen in a 20oz log and needs to be cooked by you. The recipe for preparation is on the package. This is the top version of gefilte with no fillers and, basically, will knock everybody out. I know. Weird to say about gefilte fish but, again, this is the good stuff.
We will be offering branzino fillets this week for the city but you guys get a head start!! We will be blast freezing branzino butterflied fillets. What that means is that the head is removed, the bones are removed and the fillets are still attached to each other so they open up like a butterfly. You will get 2 fish per vac pack. Each butterflied fillet is approx 8oz so perfect for one portion per person. Or you can stuff it and fold it over and roast it in the oven. Either way, have fun with it!!! And, at $12 per fish, compare that to a restaurant where you pay upward of $35 per and, well, yeah....
Now, to roll with more good fun, we will offer an exclusive with you guys that we are not offering to the city. Lobster!!! So we will do that in two forms. First is cooked claw and knuckle meat from American lobster which we packed in 1lb portions. This is the sweet part of the lobster that is great for lobster rolls or pastas or risottos. To give you and idea of the value of one pound of lobster meat, whole lobsters yield about 20% meat after you cook it. 1lb of lobster meat is what you get from cooking 5lb of whole lobster!!! This is a great price from a great supplier in Nova Scotia and you don't even have to work at it!
Also on the menu is 4oz frozen lobster tails from South Africa!! South Africa produces what is considered the best lobster tails in the world. They are definitely the most expensive. The great thing about these tails is that the meat is so sweet and the tail is packed with it. More so than you would get from the same sized American lobster tail. I posted a great recipe for cooking these things on our website. Don't forget to buy the Bibou butter. Trust me...
We have so many other goodies but I feel like you are already get tired of reading so I'll save some more descriptions for another time.
As with all vacuum packed items, you can thaw out the product on your fridge overnight. Just make sure you remove from the bag first. Thawing slowly is better when NOT under vacuum. If you need it in a pinch, run the bag under COLD water and this time you can do it under vacuum because it is quick.
We have tons of recipes on our main website that you could play with. And we love to get photos of what you make. It always makes us happy to see how people play with their food.
Lastly, we would love all the feedback we could get. Such as , how was the delivery service? How did the product look when you got it? How was the seafood? Did you like it? And so on. The more info we get, the better we can get at this. You are an important part of the process.
