Week of June 13, 2022 Small World Seafood Update
Transitions are always a little bit dizzying. School is ending, work is slowing down for some, beach houses and mountain homes are opening up. The city changes its complexion and our appetites change as well...Summer is here, folks...
So, I am not one for the commercial aspect of commemorative holidays. The whole business around Valentine's Day, Mother's Day and Father's Day can almost turn me off to the real value of appreciating the people that are always there for you and love you back.
When I think of fatherhood, I think of all the men in my life that taught me things. Some with patience. Some with a carrot. Some with a stick (not literally). Some taught me things that were trivial to them at the time but would shift the direction of my life in a marked way. Some served as examples of who I could hope to be one day. All of them took the time to offer some advice or consolation that, in their way, was a show of love. I may not have felt that at the time but I do now. In the end, I am not made of only me. I am made of me plus all the good men I was blessed to have around me in my life who have taught me how to be a good man (hopefully). Happy Fathers (no apostrophe) Day to all of you!
And so, this week should be as fun and exciting as Mothers Day, no?
We finally got to see some swordfish a couple of weeks ago after many months and we have more this week!!! Fresh sword will melt in your mouth!. Takes so well to marinades and is great on the grill, roasted in the oven or poached in a liquid!
The second fish this week is Rainbow trout from our friends in idaho!!! We will be selling these, as usual, two fish per order either head on or head off and both are boneless. Everybody who gets our trout always raves about how good it is because, well, it is that good!!!
And if mama gets lobster tails, papa has lobster tails too!! Once again, those amazingly good 6oz Galapagos red lobster tails! Packed with meat and top of the line stuff!!
Hokkaido scallops are dropping a tad in price again. Yay! At least something is, right? Down to $25lb.
Fresh Venezuelan Jumbo lump crab meat is holding steady at an affordable $25lb. Compare that to the supermarkets...you'll see...the crooks...
Mussels are the shellfish of the week. Oysters will be Pink Moons from PEI. We will have some Acme smoked trout this week too along with the marinated fish and other smoked stuff for a tasty brunch.
And though that is exciting in itself, we also will have a few really, really fun things this week too.
First up, some of Aaji's delicious Tomato Lonsa!!!! This is locally made by a family from Fairmount. This coastal Indian condiment and base is spectacular with seafood. It will go amazing well with the trout and would be killer with the swordfish. Or use it to make an unbelievable bowl of mussels. Some even made a pasta dish with it. Yum! You need this..
Second up more labneh from Love-a-neh!!! Labneh is a strained yogurt cheese that is spreadable with a delicate tang..Everyone who had some last time was floored. Don't be left out on this. Very small production stuff starting with special milk from a farm in Bucks County that do everything the right way. How do you make good yogurt cheese? Start with great milk. This is done in the Armenian style which is arguably the best. A little lonsa with some labneh? Yeah....flavor explosion...Don't get remorse for not ordering it. It will most likely sell out fast..
And then we get into a couple of things that are dear to me. You see, before I got into the seafood business, I owned a gourmet hot dog shop in Center City called Underdogs. One of the more unusual dogs we sold was actually the most Philly dog there is. It is called 'The Combo' and was made famous by a hot dog shop back in the day called Levis down off of South Street. It was a combination of hot dog with a codfish cake. Yeah, weird but amazing. A little brown mustard on top and voila! A Philly classic indeed!
So, we partnered with El Camino to make some real all beef hot dogs! These smoked links are the real deal! If you like hot dogs, you will love these! These will take you back to how hot dogs used to taste.....Real...
We also partnered with someone to make us some codfish cakes. We gave them the cod and they did the rest, the classic Philadelphia fishcake and a crackermeal dusting. You can spray some oil on them and roast them in the oven at high temp, airfry them or deep fry them. You can eat them on their own or with the hot dog.
And that's it for now. Whether your fathers are still around or not, please take the time this week to throw them a thank you. You need to say it once in a while and they need to hear it once in a while...Thanks dads..
