Ilove it when fish coming into the markets look really good. It usually means that supply is a little higher than demand and only the good stuff get shipped..Soft shell crabs came in!! Halleluyah!!

The striped bass fillet looks terrific. Wild fresh fish from Maryland, a great fish to grill, pan sear (check out the recipe on the site for black bass fillet - same technique) or roast in the oven. Marinate in whatever you like for 30 minutes and then roast at high heat (425F) for 10-12 minutes....Typically $32-$42 per plate in a restaurant, you get 2lb for $32 and can feed 4-5 people. That's a win!

Spanish mackerel fillet from the Carolinas is the best. I posted two great recipes, one Italian polenta crusted and on Thai with red curry sauce. Both are winners. But, a caper brown butter prep would be dynamite too! Delish and affordable at $22 for two pounds. Good stuff.

The salmon salmon from the Faroe Islands looks especially nice this week. It is always nice but, I don't know, it feel super nice. Sushi grade and melt in your mouth good when roasted. This is top of the line stuff.

As I stated a couple of days ago, Fresh Venezuelan Jumbo lump crab meat has taken a little dip and we will pass on the savings...of course because we are not accomplices to the 'greedflation' thing. Fresh means you have a 7 day shelf life in the fridge but it is always best before day 4-5. Can't be frozen because it changes the texture but can be made into crab cakes and those can be frozen since the binding protects the meat.

Hokkaido scallops are, well, the best. Sushi grade, sear perfectly and taste amazing. What more can you ask for? Okay, a dollar cheaper a pound. Yay!

We made another shot of pastrami cured kippered salmon which we just love! Hot smoked and cooked through, this stuff starts with Faroe Island salmon and is just amazing.

Also, another shot of smoked Albacore spread is on hand. A combo of east coast albacore, Spanish mackerel and haddock, this is such good stuff!! Top it off with a little marinated anchovy and fly to the moon!!

Littleneck clams are the shellfish this week. Oysters are the larger Summersides from PEI. Big in flavor and very meaty.
