Hello, everybody!! Well, this is the last run of the year!! I love all the Christmas and holiday meals you guys prepared last weekend! Wow!! Seven fish meals were so creative and looked delicious!! And just imagining what that would have cost if you ordered all that stuff in a resto and it makes me shutter! You save a lot of money and make it better anyway..Big wins..And now New Year's weekend is upon us..
We have a few things that are just perfect to wrap up 2022. First off is some beautiful swordfish from the North Carolina. A nice shot got pulled in to Beaufort and we got our hands on it. Our sword is not like swordfish you get in restaurants. They usually buy imports because that is cheaper. Not us. We buy local because it is better. The flavor. The texture...And it freezes very well too. Great for pan searing or roasting but one of my favorite ways to prepare it is poached in a sauce such as puttanesca or thinking of it like chicken and making a piccata. I posted a couple of recipes if you want to go posh.
Second up is fresh Rainbow trout from Idaho! Now, for those who have had our trout, you will know how good the quality is. It is superb. It comes boneless and either head on or head off. Great to roast, pan fry or stuff with crab meat mix or a fish cake. I posted a recipe for that which is so easy and will knock your socks off...2 fish per order. I would count it as one fish per person for a meal unless tyou are having other things..
Okay. Let's twalk hamachi! Also known as yellowtail, this sushi grade fish comes to you as a loin skin off and boneless. They are vac packed and frozen and range from 1.2-1.7lb each. Just thaw, slice thin, top with jalapenos, our ponzu sauce and...superstar..And considering what you would pay in a sushi place for 4 skinny slices, best deal ever!! Because of the variable weight, we will list it for $1 to secure a loin with the balance due at the truck when we tell you the weight of your piece..
What is New Year's eve without lobster, huh? So, two ways. You can get 5/6oz Canadian frozen lobster tails. If you are surfing and turfing it, you won't find a better deal than these! The price dipped a bit and we pounced on it! Sotck up people..Or, get 1lb of cooked claw and knuckle lobster meat vac packed and blast frozen. Now, some people look at the $38/lb price and say, oh, my. But, whole lobster only produces 20% meat from its whole weight. So, one pound of meat is generated from 5 pounds of whole lobster!!! At $38lb, that means you would be paying less than $8 per pound on whole lobster if you wanted to do it yourself and you don't even have to do it yourself!!
Oh, and this will be that last chance at getting our cleaned Maryland raw blue crabs frozen in 2lb bags. This is the perfect item to make a crab gravy or stock with. People who made that last week lost it so definitely worth keeping in mind.
Plenty of Faroe Island Salmon fillet including whole sides you could play with by roasting whole or curing to make gravlax or whatever. Plenty of Hokkaido scallops to sear up or eat raw. Yeah, sushi grade just like the salmon.
Littleneck clams are the shellfish of the week. Oysters are Summersides from PEI because, well, days are now getting longer and, well, I am dreaming of summer coming...Oysters have beeen outstanding lately, no? That time of year..Also, the blast frozen whole fish of the week is Daurade from Greece! Scaled and gutted and ready to go!!
And New Year's day brunch..Well, we have it all, people. Smoked salmon, whitefish salad, Smoked Tuna spread, Boquerones, dill herring, labneh aaaaaand, we brought in some trout caviar! This cured roe is a little smaller than salmon eggs but have a little more pop and firmness. Perfect for a little appetizer topper too! Cracker, labneh, smoked salmon, trout caviar? Yes, please!!!
We switched over the size of calamari we usually sell. Typically, we had 2.5lb frozen blocks of tubes and tentacles. We will be switching over to individually frozen squid tubes and will pack them in 1lb bags. Easy peasy. Take one tube out or use all of them. Up to you.
We will have Erivan Dairy's amazing labneh. We will have Aaji's unique Garlic Tomato Lonsa along with another flavor of theirs, Spicy Tomato Lonsa, a Coastal Indian tomato base that goes so well with the labneh, actually. Crazy. Also, you could use it to make one banging bowl of clams or pair it with swordfish!!..We will have more of Oui Pastries from Old City's frozen pie dough. Oh, and more of our Miso dashi tuna tomato sauce. Umami central..Plus, Mycopolitan mushrooms..
And don't forget your frozen shrimp, pasteurized crab meat (good in the fridge for a year) and condiments and sauces...And dog treats for doggies...
All the other usual suspects are around as well so have fun, take your time, hurry up and get your order in!
