Week of january 2, 2023 Small World Seafood Update
Hello everybody!!
Well, another year over and it all seems kind of weird to me while i write that. I always liked end of years for the cliche 'best ofs' and the cheesy reflection on what we accomplished over the past 12 months. Now, December doesn't seem so festive like it used to and I don't really feel like looking back...hahaha.. Almost like I feel just a relief that we made it through another year. Ughh..
Well, that's not exactly true. On the one hand, globally, definitely I am glad this year is over. The planet is still crazy. Nuts. But on the other hand, I got to see everybody's culinary development hit wonderful levels of excellence and your photography has been getting so much better! Witness the Insta posts of dishes you've prepared and emailed us. It's an amazing feeling to know that every weekend, we are part of the meals that bind your family together. That we are part of dinner parties that allow you and your friends to have a slow, layered meal with lots of goodies that you can prepare as well or better than restaurants can (and at a much cheaper price considering the cost of going out these days..what's up with the price of cocktails..WTF..) That we are part of the growth in menu options available at the best restaurant now one is talking about..."Chez Vous"..
As some of you have noticed, we've added a bunch new items and we are working on many more. I know that life is speeding up and having the ability to make a world class meal very quickly with great ingedients is a real godsend after a long day of work. Lots of you have tried out blast frozen fish and can attest to the fact that the quality is superb. We will continue with some of that.
We want to expand the special features section to bring you more great things that great people are making. Things like labneh, lonsa, mushrooms, etc..And, we will be adding items that super easy to make quickly in a pinch. In 2021, shrimp shumai took you all by storm. This past year, it was fish cakes..What will this year bring? Who knows, but we do know this. The quality will be excellent. There is no compromising that. Ever.
As for this week's stuff, most markets were closed yesterday in observance of the holiday but we think this week should be a little bit about just comforting ourselves. We know that there will be fluke this week. The best flounder ever. We know we will have Faroe Island salmon this week. Also the best of the best. Hokkaido scallops, crab meat, whole daurade, mussels, oysters and all of out other usual suspects.
For now, I just want to wish you all a very happy new year full of fun, family, friends, food, fish...only the good f-bombs, people!!! And, I hope you continue to grow your skills along the creative path you've been on..It's been beautiful so far..
And that's it for today. I know, I know, lots of words. But, hey, lots of info too, no?
Peace
Robert Amar
