Boy is it thick out there. Oupphhh!! Thank you to everybodty for your feedback on the email I sent out Monday. It was very helpful in trying to ameliorate the sending of these newsletters. Hopefully, this will work better but it will still require some dilligence on your part to check your spam or promotions folders once in a while.
Aaaanyway, let's get to the fun stuff!! First off is branzino which we haven't sold since May. That seems like forever ago and we are happy that it is back! You can buy it in fillet form or whole fish (3 per order) which we will scale and gut so it will be ready to go on the grill or in the oven after you juge it up. We have two great recipes on our website for how to prepare it oboth ways. Take some pics, send thme to us and we can post them to our insta.
Next is another item that we havent seen in a couple of months, Soft shells!! You will get 4 jumbo soft shells which we will clean (or dress as it is called) for you. Now, remember that they are sensitive little creatures to begin with so after we dress them, the shelf life isn't very long on them. You have up to two days to cook them. One thing about softies is that they freeze extremely well so you can certainly do that if you plan on cooking them at a later time. Also, if you haven't tried that recipe I posted on the slow cook method by Mark bittman, you should. it'll blow you away! Or go classic and use our dredge before you saute it. Yum as well.
Also, the salmon of the week is 'salmon salmon' as I call it (because it is Altantic salmon) that is farm raised in the Faroe Islands in the North Atlantic. Very cold, very clean waters produce a terrific sushi grade specimen. Plus, these islands come under the control of Denmark and we all know how well they like to do things anyway. Could it up with some of our miso glaze and feeeeel the fireworks...boom boom boom...
Mussels are on the menu this week. Oysters are Savage Blonds from PEI. Shumai is around as is frozen octopus, Unagi (eel), and cod is the frozen fish of the week. No squid this week, unfortunately.
