 HELLO EVERYBODY!!!

Well, I know sooo many people had fun with the fish stock by Rouge and the parsley butter by Bibou! I put that butter on everything this past week. I am this close to brushing my teeth with the stuff. Honestly...wow. Actually, both of those items were so popular and we find them to be so  essential to have in a seafood cooking kitchen that we decided that we will carry fish stock and parsley butter every week. So no worries and no regrets. We will have it. 

A quick reminder to those not great with a calendar. This week, the order form will go out as usual on Wednesday with pick up on Thursday as usual as well. Next week, there is a quick turnaround with an order form going out Monday, Dec 21 for pick up on Tuesday Dec 22. Because of that short week and because it is Christmas week, fresh fish will be limited although I can tell you that we will most likely do Sablefish for Christmas week. Then, the following week, we will do the same thing with the order form going out on Monday 28 with pick up Tuesday 29. Then we go back to normal in early January, 10 days to Thursday pick up.

Speaking of stocks, the rest of the month, we will feature a different stock along with the fish stock. So many people made cioppinos and seafood stews last week that I thought that maybe we can continue to explore other fun stocks. So, this coming week we will be featuring shrimp stock made by Oyster House. The following week (Christmas week) we will feature crab stock also by Oyster House for those who want to make crab gravy (more on that next week). The week of New Year's, we will feature lobster stock to go with lobster items. Now remember, we will still carry fish stock every week as well. Also, if you don't plan on using any of the other stocks in the coming week, we plan on featuring them once a month so you will get another stab in the future.

As I see the variety of dishes you all prepare i realize that we haven't been going away and we miss it. No winter vacay after not having summer vacay. Though year. Sometimes, though, food can be a great vehicle for an escape to a spiritual bliss.  So, this week, the theme will be Spanish. That shrimp stock? how about a delicious paella? You can use fish stock but shrimp stock takes it over the top. Here's a good recipe.

Sticking with Spanish theme tangentially, we will be featuring Spanish mackerel fillet!! This underrated but very flavorful fish comes to us from the beautiful shores of Florida. Hey, if we can't go there, it can come to us...sort of. For those who haven't had Spanish mackerel, this is the mildest of the family with a flavor between trout and fresh sardines. Easy to cook, these 6-8oz skin on fillets can be prepared in a variety of culinary styles. here are two different but delicious ways.

Lastly, eating 7 fish is going to be pretty tough if you are cooking for 1, 2 or 4 people. So, I was thinking, "Why not spread it out?" meaning, no one set it in stone that you had to eat all seven fish in one meal. So, this week, we will bring back fresh smelts! You can eat them this week or freeze them for Christmas day if you want. This is the last shot at these fresh tasty little things. Jump on it.

Mussels are back this week. Peruvian bay scallops are back this week. Oysters will be Silver bells from Cape Cod. Go on, try to guess why we picked those. Smoked trout will be on the smoked fish list and fresh Jumbo crab lump meat is around although the price is up a notch.

And as a vaccine is beginning to roll out, the electoral college finalizes the vote of the people and 2020 is quickly coming to an end, I thought that this is how we should start celebrating the beginning of the end.
