March 28, 2022 Small World Seafood Update
Well, winter and spring are duking it out right now for supremacy. Spring has been winning but winter sure is putting up a fight, no?
Well, as we navigate through this brackish seasonal space, we see the remnants of winter fish still popping through here and there as well as the peeking through of spring and summer stocks beginning to emerge. Swords and tunas should be coming soon. Halibut and soft shells will be here before you know it. Wahoo and walleyes will be on deck. Just fun stuff to think about.
Week in and week out, lately, it has been a little tough to see what fish we could see coming our way. The winds over the weekend have idled many boats. It's a dangerous business going out to catch fish.
One fish that we will be featuring this week, though, is the same fish that we've seen a few times through the winter months to raves...but not the same. Okay, let me explain. First of all, we are so happy that we've turned a ton of people onto fluke. Fluke is our local version of the general category of flounder but is not a flounder like most of us would know which are mostly soles. Make sense? Fluke is, in fact, not a sole at all and is actually in the same family as halibut. So, they are flat fish and look like flounder but...not.
Now, most fluke you see on the market and all the fluke we've sold have been mediums and larges which produce small fillets that look like flounder. Well, there are Jumbo flukes that exist out there that produce much larger fillets from 1-3lb each! Yup! And these fillets produce thicker portions that cook up a little like really small halibuts. Are you with me here? Good. Still sushi grade if you wanted to make crudos, as well. So, that's fish number one.
The second item I am not sure of yet. We do have a couple of maybes on some really fun stuff but I've been scheming with the rabbit to find the best time to make an appearance. Let's just say it'll be a surprise...What I am sure of is that you can never get enough of really good fresh Jumbo lump crab meat and perfect Hokkaido dry scallops. Back and back. Best crab cakes and best scallops to sear or eat raw.
Salmon of the week is salmon salmon from the Faroe Islands. We love this stuff...Sushi grade and just melt in your mouth.
Clams are the shellfish of the week. Oysters are from PEI but not sure which yet. Smoked haddock is still around. That ridiculously good kippered salmon with our Mediterranean seafood marinade. Oh, my. Made some omelets with it and they were out of this world. The best way to sub out bacon is to use smoked hot smoked salmon.
Anyway, the plastic bag mandate will begin to be enforced after April 1 so please try to remember to bring a bag with you. We will be switching over to reusable, recyclable bags to comply with the law but bringing your own is always the best thing.
