Week of February 3, 2025 - Small World Seafood Update

Fly, Eagles, Fly!!! On the road to victory!!!! Gotta say it again!!! This Sunday is the Super Bowl so you gotta keep that in mind when you are thinking about your purchases for the week! Well, actually, you don't have to think about it because we did!!! It's sos exciting to be back to the Big Show and it's always fun to up the game on the appetizers and food for the game. I mean, chicken wings??? So 2004...
First what you need is a powerhouse appetizer that ups the game to the next level. What is better than hamachi loin!!! Frozen skinless, boneless loins ranging from 1.2-1.8lb each, these babies slice up beautifully for the perfect crudo. Top with jalapenos (green) and maybe some wasabi tobikko (more green) and then drizzle with some of our ponzu for one killer platter!
Well, as great as that is, and it is great, we thought it would also be awesome to bring in some fresh cooked lobster claw and knuckle meat!!!! The lobsters are making their way down before tariffs kick in (let's see what happens there...that could be a whole other newsletter) so we can maintain the same price we've had it for. The price was already a little higher but tariffs will kick it up a ton so take advantage of this one. We will vac pack them so they have a week shelf life. Perfect for mini lobster rolls for the game. And if you use some of our parsley garlic butter, well, more hints of green..see where I'm going here?
And since we have a little sushi thing going with the hamachi, how about another 'super' special item. 'Super frozen' otoro!!!! The prized belly from the bluefin tuna, these approx 0.5lb pieces are frozen and held at -60F to preserve its freshness. Once you bring it home, place it directly into your freezer. You will have a week to use it. There is a VERY specific way to thaw it out in an ice bath. Please follow the directions! It really makes a difference...
With more nasty weather around the Faroe Islands, we will have fresh Steelhead trout fillets this week once again! Come, on. Tell me this isn't a 'super' tasty cousin in the salmon family. Sushi grade and will just melt in your mouth!
And since we still are in it's season, we will have more local herring fillets this week! They were a hit a few weeks back so we thought it would be nice to bring them back...
More branzini Butterfly Eagles fly! ( I'm out of control...) More rock shrimp and whole daurades. Grab your wagyu beef for the best nachos you'll ever make..Don't forget your large shrimp for cocktails...seaweed salads for more green in your life..
And then to stay on message here, Matt from Settantatre Pasta Co is making some swordfish meatballs mixed with some halibut to lighten things up a touch in a pesto cream sauce!!! Heat them up and add them to som spinach linguini and green on green , baby!!!! (I need help...)
Oysters from Maine this week will be (City of Brotherly) Love Points. Shelf life is 10 days so perfect for the game...
Mussels from PEI are the shellfish of the week...with some spinach linguini, best cheap meal ever... We have lonsa and smoked fish and tahini...So many good things.. Oh, and babka kits too..breath, everyone..
Plenty of crab meat, shrimp, etc....
I know, I know..Lots of words...
Anyway, as usual, I have to thank all of you guys for being in our lives. What an incredible community we live in...
