Well, super excited to be back at this and can't wait to see you guys! We are in the middle of the summer season for fish and that means that there are some good weeks for some great fish that we love!
Halibut is back! We have some more gorgeous halibut for you guys from our friends in Nova Scotia. This is really the king of flat fish if not just flavor wise but definitely size wise. We leave some skin on to hold everything together. A lot of you have tried our recipe on our website for the restaurant technique to cooking halibut fillets (any thick fillet actually) and you did it so beautifully! Compared to what restos are charging for it or even gourmet markets, you make out like a bandit.
Rainbow trout is not all the same. Our rainbow trout from Idaho is meatier, more flavorful and fresher than any you may have ever had unless you fished for it. You can choose to get it head on or head off with the skeletal bone in both removed. Great stuff, freezes really well.
Salmon salmon from the Faroes Islands, what more can I say. The best salmon anywhere. Roasts up beautifully and is amazing in a poke bowl.
Hokkaido scallops are unmatched for quality, flavor and versatility. Sushi grade and gets a perfect sear every time (check out our recipe for searing scallops on the website).
Littleneck clams are the shellfish of the week. Oysters are Savage Blondes from PEI. Plenty of shrimp smoked fish, marinated fish and goodies to stock back up on so I'll leave it short here.
