Week of July 11, 2022 Small World Seafood Update
Hello everybody!!!
I hope everyone had a wonderful July 4th week!!! I am still in Spain heading back his week. Sitting here in beautiful Toledo writing this is such a mind bend. Actually, this 107F temp out here today is totally insane. But it is so beautiful here and I can totally buy into this siesta thing when you don't have a choice!! Hahaha..And don't just say 'But it's a dry heat" because 107F in the sun is hot a hell..
Anyway, what a world that one can still be connected to everything without really being there. I've been following the markets to see what the sea will be nice enough to offer us and I gotta say this week looks amazing!. First of all, we have some gorgeous rainbow trout from our friends in Idaho! Everyone who has had the pleasure to have some has raved about how amazing this trout is. And it is! We will sell them head on or head off and boneless in both cases. Great on the grill, roasted in the oven or pan seared on the stovetop. Just aa great meal.
Also in store is everyone's favorite king of flatfish, Halibut!!!! Yes, more of that amazing halibut from Nova Scotia is coming our way! We love this fantastic posh center of the plate fish that restaurants charge a fortune for. Yeah, and you get to make it at home at a fraction of the price and just as good as they can. Yup. I've seen you cook.
I'm sure that some of you are in need of a salmon fix after two weeks. Well, more is coming from the best place to farm salmon, in our opinion, the Faroe Islands!! I think the next the fam schedules a July vacay, I'm voting for there. I could deal with cooler weather...ugh...You should google Faroe Islands too. Pretty magical place..
More scallops are coming this week from Hokkaido Japan. These are the best of the best found in top sushi houses because, well, these are the best! They sear up beautifully and can be eaten raw. Yeah, make a crudo and you'll see.
We may have a couple of interesting things lined up for the week too but we shall see. Plenty of the other goodies that make up your weekly snacky snack lives such as marinated anchovies (boquerones), herring, sardines and smoked fish.
Littleneck clams are the shellfish of the week and oysters will be Savage Blondes from PEI (another cool place for a summer visit).
Anyway, I don't miss a ton of things in Philly but I do definitely miss seeing all of you even if it was for just one week. Just wanted to say that. Ok, I'm off to a flamenco show....
