Week of December 23, 2024 - Fairmount/444 N 4th Order Form
Hello everybody!!
I know it's weird to be getting an email with an order form on Christmas day. Let me tell ya, it's kinda weird to be writing one. But, this is the way the holiday as fallen this year so, we gotta do what we gotta do..
First of all, I would like to wish everyone a very happy holiday, whatever you are celebrating. At the very least, hopefully celebrating each other. It's a good time to pause. The past month has been moving at the speed of light and today, it is so nice and quiet out there. Peaceful..
Okay, well, this is the week to pick up what you need for New Year's Eve as well which is next Tuesday night. We will have shop hours again on Monday from 10am til 1pm at 444 N 4th St. For anyone who needs to add anything..
Let's get into it. Black Cod! One of the hits of the year and such a posh thing to put out for a group or for a lovely NYE dinner for two. I mean, if you went out for dinner that night, you'd spend a fortune. Seriously. And it wouldn't be as good anyway. The whole sides range from 1.2lb to 1.8lb each. Thaw the sides in your fridge overnight or under vac in the sink under cold water, marinate in our miso glaze for two days (for real), bake at 450 for 10 minutes, broil for 5 and voila! Nobu Miso Black Cod for fraction of the price! And better...
Next up, and since we will have no fresh Faroe Island salmon this week due to the Christmas holiday (they give their people the holiday off) we will have fresh Steelhead Trout fillets from Scotland!!! This cousin of salmon is prized in the Nordic countries for it's fattiness and flavor. Sushi grade as well so perfect for a poke bowl. The flavor is a cross between salmon and rainbow trout and really pretty fine, in my book. Cooks the same way as well!
Hamachi loin! Skinless, boneless. Also known as yellowtail, this is an absolute winner if you are having a small group for NYE or really great for New year's day if you have a group over. Slice thin, top with sliced jalapenos, drizzle with some of our ponzu sauce...incredible...
We have more Martha's Vineyard bay scallops! Great for a ceviche..We have more cod cheeks. Another delicacy. We have branzini butterflied. We have whole scaled and gutted daurades....
And lobster....we have the larger South African lobster tails. Best of them all. We have cooked claw and knuckle meat from Nova Scotia fresh and vac packed for a good ten day shelf life in your fridge. And we will have more fresh lobster ravioli from Settantatre Pasta Co. Winner, winner, lobster dinner!!
And how about more raw slice foie gras frozen and ready to sear up? If you are going posh, go posh..
You have a ten day shelf life with oysters actually so go for it! This week's oysters are Pleasant Coves from the Damariscotta river in Maine. Nice and plump...
We have Osetra caviar and dill marinated herring is back..big sigh of relief out there...
See what I mean?? All this good to stuff to choose from.... Life is good...You'll never need to leave the house...
And don't forget your frozen shrimp, crab meat, and condiments and sauces...And dog treats for doggies...Coddy Canes are back too..
I know, I know. Lots of words but, hey, consider the alternative...
