Week of December 16, 2024 - Fairmount/444 N 4th Order Form

Hello everybody!!

And now the holiday Olympics begins!!! Christmas and Hannukah falling on the same day this year so Seven Fishes and latkes!! Seven fishes is such a unique thing around here. Most everywhere else in the world, no one knows about it but we, in Philly, love it! Everybody is doing it, actually. Not just Italians. I know tyhe French have influenced the restaurant and culinary field tremendously. But has any other cuisine invaded our weekly repertoire of cooking and eating more than Italian food? Chinese and Mexican come close but Italian is still king in my book. And it is a herculian task in scale which requires creativity and smarts. The Heptathalon of seafood cookery. What fun!!!

P.S. We'll have shop hours on Monday from 10am til 1pm. 444 N 4th St.

Anyway, for those who attempt the Seven Fishes by spreading out the items over the span of the holiday week, first up is fresh sushi grade tombo!!! Also known as albacore tuna and coming from Hawaii, this fish is sooooo good. And versatile! Perfect for poke bowls, hand rolls, tartares..And perfect for poaching in a sauce. How about a nice puttanesca with albacore and fresh sardines??

And then a nice slate of blast frozen stuff..We have whole sides of Chilean Seabass!!! These range from 1.1-1.6lb each and are absolutely beautiful. A great center of the table item. For sure!!

We have fresh sardines gutted! We have wild head on shell on shrimp from North Carolina! We have Martha's Vineyard bay scallops! Great for a ceviche or risotto, yeah? We have smelts! A must! We have cod cheeks! One of the great hits of the year!!! Perfect for those checking off numbers by making a Cioppino or bouillabaisse.

We have butterflied branzini! Easy peasy nice and easy! I posted a vid on our site on how to prepare it four different ways. You can do it!

And then we roll into the lobster part of things! Fresh cooked claw and knuckle meat from Nova Scotia! Great for pastas or how about a pot pie using one of Oui Pastries doughs? Or South African 5-6oz lobsters tails! These are bigger than the ones we've brought in recently but, hey, it's the holidays! packed with meat and so sweet! Check out my recipe on splitting them and pan searing. Delish!

And the lobster cherry on top is fresh lobster ravioli from Matt over at Settantatre Pasta Co!! You get a pound of ravioli for $15! Combine that with the lobster meat in a nice cream sauce...drooool.....

Lots of crab meat for everyone! No worries. And sea scallops which always seem to make the table. We have these blast frozen for those who want to use them on Christmas eve or day.

Yes on Faroe Island salmon fresh or blast frozen and sushi grade for both!

And onto the shellfish. We will have mussels as well as littleneck clams for you all. Both will still be good for Tuesday night dinner. We are bringing them in directly to ensure that the shelf life is long. As always, actually. Just leave them in the mesh bag in a bowl in the back of your fridge and forget about them. No water or ice.

Same with oysters, by the way. You have a ten day shelf life actually so go for it! This week's oysters are Topsiders from the Damariscotta river in Maine. Nice and plump...

We have Osetra caviar and dill marinated herring is back..big sigh of relief out there...

See what I mean?? All this good to stuff to choose from.... Life is good...You'll never need to leave the house...

And don't forget your frozen shrimp, crab meat, and condiments and sauces...And dog treats for doggies...Coddy Canes are back too..

I know, I know. Lots of words but, hey, consider the alternative...

Here is the order form. Bring a bag! Bring a bag! Bring a bag!
