Hello everybody!!!
Well, it's gonna be a hot one! Boy, it's creating these beautiful, powerful movements in the evening of wind, dark clouds, rain. Just a a whole lot of awesomeness in the true sense of the word.
This week, we revisit an old friend we haven't seen since the spring..fresh halibut fillet! from Nova Scotia! This king of the flat fish is a favorite of many of you and for good reason. Flaky flesh, mild and sweet in flavor and takes to any sauce superbly. We leave the skin on to bind everything together. Cooking a piece of fish like this requires either baking in the oven or a combination of pan searing and finishing in the oven. We haver a terrific recipe on our website that guides you through how to do that.
Second feature is Spanish mackerel fillets from North Carolina. This super tasty fish is not as fishy as mackerels you may have tried such as Kings or horse mackerels. It is, indeed, the mildest of all mackerels and has been the biggest surprise to many of you of any fish over the past year. It's adored in the Mediterranean as well as in Southeast Asia. Super easy to cook whether it is pan searing, grilling, roasting or try your hand at pickling, curing or ceviche. Yup, it's sushi grade. Or marinade in our miso glaze and broil. Yummy!
Speaking of sushi grade, the salmon of the week is Arctic Char fillets from Iceland. The cold pristine waters provide these sustainable farmers with the environment to produce top notch stuff. And it is. Great for pokes, great to cook just like you would salmon salmon and great with the miso glaze too!!
Our outside feature of the week is brought back by popular demand. Smoked sausages from El Camino Real in Northern Liberties. You get two packs, one chorizo and the our kielbasa smoked in the Texas style. These are cooked, vac packed and frozen so you can eat them up whenever you want. I'm just thinking that it's littlenecks clams week so......or you wanted to make a paella so....
Oysters this week are Acadian Pearls from PEI. Shrimp shumai are still around as is Unagi (eel), Spanish octopus and we've added kippered salmon to the list of smoked stuff for this week. And shrimp stock this week.
