HELLO EVERYBODY!!!!
I know a few of you are away on vacation with the fam. It's awesome to see people moving around. On the other hand, more people moving around means more traffic and congestion and tons of road rage..It's bad out there so be careful if you are driving long hauls. People are a little out of their minds right now and coping with stress through aggression. I'm dealing with it with the use of denial...much nicer...We've just gotten through a tumult year but we are only at half time here. Still lots of game to go before things really level off.
Speaking of vacation, we will shut down for one week right after July 4th and resume the week of July 12th. So, next week will be the last before the short break.
Anyway, onto the fish of the week! First off is a new one for us. Whole Greenland turbot is a delicious fish that is a smaller cousin of the halibut family. Tastes like it too. It comes head off, cleaned and frozen. Don't let that dissuade you, though. This is a fish that always comes this way. I posted a great recipe on our website for how to roast it as well as a video on our Insta page @smallworldseafood with some commentary on how to do it a little differently than the video. The fish range from 2.4-4 pounds each and can serve approximately 1lb per person. As with the octopus, we will charge you $1 and figure out the balance at the truck and you can pay for the difference then so just enter $1 for each fish you want.
Next up is beautiful Spanish mackerel from North Carolina. The fillets come skin on and boneless. This fish is a favorite of many in Asia and the Mediterranean. In fact, it is kindo of like a poor man's branzino but with more flavor. It has one of the highest levels of Omega-3s of any fish out there. Two great recipes on our website. Can definitely be grilled, too, it you were thinking of preparing it, French style style with lemon caper brown butter. Mmmmm...
Also on the docket is delightful Grey Sole from Massachusetts. This elegant fillet of sole is so sweet in flavor and creamy in texture. Great to roast, broil, batter and fry or, one of my favorite ways, simply dredged in our seasoned dredge and pan seared. Top it off with a little lemon juice and, voila! Did I mention elegant?
Atlantic salmon is with us again this week. May not be next week with the holiday weekend and supply looking like it will run short. Anyway, the salmon THIS week looks gorge..
Mussels are on the menu this week. Oysters are Shiny Seas oysters from PEI. Frozen mahi is replacing the frozen cod this week. And, lucky for us, Mycopolitan mushrooms are available this week in limited quantities..
