HELLO EVERYBODY!!!
Boy, am I excited to winter's over! Pheewww!!! There are little things that bring a hint of what's to come. Squirrels. Canada Geese flying over. Being able to sit on my steps with a cup of coffee in the afternoon basking in some sun. But the thing that really gets my butterflies going in my stomach? The ice cream truck drove up Woodstock St last evening, that Mr Softie song playing over and over. Ahhhhhh...can't wait to hate that tune by August...
Anyway, sablefish or Black Cod from Alaska is here this week! It's been about three months since we've seen it. Super excited. Great fish for many applications but the most famous of all is the Nobu Miso glazed Japanese Black Cod recipe. It's on the website, smallworldseafood.com, but here it is again.

Also, to celebrate the coming of spring and a more optimistic future, let's do some lobster tails! These beautiful 4-4.5oz tails come frozen and packed two per bag. They come from South Africa and are considered the gold standard of lobster tails. They are usually stratospherically expensive going for $60-$80 for a pair in a steakhouse or casino. My favorite preparation is to split them lengthwise all the way through and saute them meat side down first, shell side next and then back to meat side down with a pad of Bibou parsley butter. Turn off the heat, cover it and let it rest for 5-10 minutes. Perfection! To remove the meat, always start from the tail end and loosen. The whole thing will peel right out.
Mycopolitan mushrooms are coming your way. This week, Brian is featuring blue oyster mushrooms clusters as the dominant item in the 1lb bag. Really pretty stuff that can be roasted whole for a beautiful presentation or sliced and sauteed. These are beautiful meaty mushrooms.
Clams are the shellfish of the week. We will get back to the normal cycle with mussels next week. Oysters are Model Ts out of Massachusetts. Peruvian bay scallops are going to look amazing on toast this week. We have some lobster stock available for you to play with and salmon is looking pretty wonderful this week.
