HELLO EVERYBODY!!!!

Boy, was it nice to see black bass fillets again. Such a delicious fish. And, quiet little haddock fillets seem so unassuming and neutral but, really, they are elegant little fillets. Both are nice just simply prepared and I think there is value to simple, sometimes, especially when the quality is there. 

But, as much as I usually think about seafood (you don't even know...), It is the brioche dough that really occupies most of my brain. Mainly because of Lisa in Rittenhouse Square. She posted on Instagram some photos of a beautiful cinnamon bun cake wit pecans. She also shared how this was something her mother used to make on her birthday but she never attempted to make herself. Until this past weekend. It brought back all this emotion for her as she could feel her mother's presence. Puddles for her and puddles for me. It's really why what we love most about what we do. Being a small part of your stories. So special.

Well, last week I was contemplating the past. Pondering what we missed and what we may be mourning. But this week, it's time to look forward. I don't want to forget the past. Don't get me wrong. Nor ignore it. That would be foolish. But we all have to admit out loud that there is something to look forward to. 

First, the days are definitely getting longer. You could see it in the power of the sun even though it's been a little chill. The squirrels are starting to make their way around. My dogs really missed them..Vaccinations are increasing as we move along with nearly 50 million people receiving at least 1 shot so far across the country. Fans attending a sporting event in Philadelphia Sunday night (Flyers game) for the first time in a year. Philadelphia schools had students walk through the doors for the first time in a year. 

Now, I know, let's not get too excited, right? Right. But no shame in being a little excited. We need it! We deserve it! We EARNED it! So, this week, we are going to do a little something special, seafood-wise, because we just need to do something special. This week we are doing sablefish! This fish, also known more famously as Black Cod, has been a favorite of many of you. Miso glazed for a couple of days and broiled or roasted for a fabulous luxurious dish. Next, I think it is time to do lobster tails once again! Yup, those beautiful 4.5oz tails from South Africa were a smash hit for Valentine's Day. They are definitely the gold standard as far as tails go. Get some Bibou parsley butter, slit this tails, saute them meat side down first for 3 minutes, flip them to the shell side for a couple of minutes then back again to the meat side. Drop a slab of parsley butter into the pan. Cover it and turn off the heat. Let the butter and lobster do their thang in private. Why? Because they love each other.

Clams this week. Model T Oysters from Massachusetts. Lobster stock is available this week for risottos and such. Bay scallops are around as well. Mycopolitan Mushrooms for you. Hmmm...mushroom risotto with lobster stock, anyone?

So, as I said, we don't need a reason to celebrate this week. We can, however, celebrate each other. Most especially the women. They have had to bear the greatest burden of all this past year. Happy International Women's Day but, really, thank you. You carried the rest of us. Truly.
