GOOD MORNING EVERYONE!!!
I hope everyone enjoyed the long weekend the best the could. I am so encouraged by the effort I see people put in to try to make the best out of an abnormal situation. I feel like we are at the beginning of learning how to adapt to what is becoming a new normal for us all. There is still a lot of unknown but the innovation that is developing to help us cope is incredible. In a lot of ways, you are all the pioneers of innovation when it comes to cooking seafood at home. Unconsciously, most people reserved eating seafood for the outing at the restaurant. Ordering a fish entree or some nice oysters were rarely done at home. First, a lot of the stuff you wanted wasn't available to you through supermarkets. Secondly, there was a general feeling that restaurants could prepare it better. Well, you've demonstrated that both of those things could be overcome. The amount of people in the Fairmount now shucking oysters at home is staggering! So many of you for the first time. Just fantastic.
Anyway, on the biz side of things, Memorial weekend was always a pain for suppliers like me. The shortened week causes either spikes in supply or collapses. However, I am happy to say that I did secure halibut cheeks for this week. Also, I think this is a good week for skate wing to make a reappearance. There are so many new people that have joined this group since we last did it. For all you newbies, skate wing is one of the types of local fish to really embrace. It has the texture of crab meat in its stringiness as well as some of it's flavor. We sell it skin off but on the bone (cartilage really) and trimmed (again the term is dressed). One last thing before I sign off. Many new people are asking the question of whether the salmon is farmed or where the shrimp comes from, etc. I would like to clarify a few things. First of all, the salmon is fresh and farmed. It either comes from Norway, Scotland or Chile. Now, the fact that salmon is farmed doesn't make it inferior. We don't eat wild chickens or cows for a reason. However, when it comes to farming of any kind, there are good farms and shitty farms...even in the US. This country is NOT more regulated than others. Sad to say but true. I spend a tremendous amount of time researching and testing the products to make sure they pass the grade to make it to high quality restaurants (and now you). They do exist. They are smaller sometimes or the larger companies produce more premium products. For those who ordered squid last week, you may have noticed that the package states that it is 100% chem free. That's what I look for. The best product to eat. Quality first. Supermarkets, unfortunately, work with a price first mentality even when they claim that they are selling something 'wild' . If the quality is inferior, why would you buy it?
Anyhow, I will get back to Monday emails going forward. I was just enjoying a nice day with family and figured most others were too. Look out for the order form Wednesday at 11am. That's tomorrow for those who are losing track of what day it is. Hahahaha...like everyone.
