 HELLO EVERYONE.

It doesn't happen very often but I am at a loss for words. I am sorry that I did not send an email out yesterday but, like everyone, i am trying to process all this, talk to my kids about it and see the city I love feel so much pain all around. I don't want to get political nor get into social discussions on this forum. All I will say is that the only words, for me, that can be said about all this are pain, sadness, sympathy, hurt, disgust, shame, guilt and helplessness. I won't use the word hopelessness because i believe we can heal if we love, trust, respect and honor. And that's all I'm going to say about that....

It seems a little disrespectful to be talking about fish this week but we do have to eat and we do have to do some of the  community things to try to maintain some semblance of connection. 

This week, we will be featuring wild Speckled Trout from the southern states. They vary in size between 2lb whole to 4lb whole. We will be filleting them skin on and pinboning them as well. The fish are too big to be sold whole so only fillets will be available. The classic preparation for trout is 'Meuniere', meaning in the miller's way in French. The reason the miller is tied into this is that old mills were placed in rivers using its energy to help move the grinding wheels to grind wheat. In those very rivers were the trout to fish. So, dusting the trout with flour before sauteing forged the  association forever. Here is a good little video recipe to inspire you.

Oysters this week will be Raspberry Points from PEI once again. We are making our way around this tiny island in an oyster kind of way. 

We are close to launching an online platform for ordering that will facilitate payment and eliminate some of the clunkiness of order forms. We plan on testing it out, first, on about 10 people to make sure it works properly. Stay tuned on that one.
