 Ok, so I thought we would be doing Jonah crab claws but the stars were not aligned for us. That storm last week caused delays up in Canada so none around right now. 

Buuuuuut, that's all right! We found another lovely substitute. Sablefish!!! Or Black Cod as you have seen it on every Japanese menu in the universe. It's actually not in the cod family but it wouldn't sell as sablefish so the same people that renamed Patagonian Toothfish as Chilean Seabass (it's not a bass either) renamed this one too. 

Sablefish is a species that gained a lot of traction in restaurants over the past 20 years because it is the kind of fish that is very hard to overcook. Perfect for caterers and large Asian restaurants. Nobu made Miso glazed Black Cod famous and everyone ran with it. These are smaller fillets than the ones we would sell to restaurants but this has always been about getting you the best quality for the best price for you at home. Whereas a small 3oz portion of Black Cod would list for $19 on a menu, you get a pound for $17. I think, my friends, we can call that a win. Here is a great recipe for making that dish. Keep in mind, that this is an oily fish so, alone, it can be a little intense if you are not used to it. Also, marinate for a day or two to really get the best out of the marinade.

Also, on the menu is rainbow trout. We have it as fillets which is the bulk of what we are offering. We also have it head on and bone out for those who want to stuff or grill or roast a whole fish. This will be limited so jump on that early.

On the frozen fish side, we will be going off mahi and back to Icelandic Cod. This is true cod and excellent quality. Clams are back as we continue our rotation with mussels. Shiny Seas out of PEI will be the oyster du jour.

One more section we are testing out to see if you guys are receptive. We also have access to smoked fish and thought we could bring you some a good prices. We will be offering Smoked salmon in 1lb packs and whitefish salad in 1lb tubs. But are good in the refrigerator for at least a month. They come from Acme Smoked Fish in Brooklyn. Not the same as the supermarket chain. Really good stuff. This is the smoked fish you get in Jewish delis in the Northeast if they care about quality.
