GOOD MORNING EVERYONE!!!
Phew!! What a crazy weather week that was. Nice day here, rainy day there, huge flooding events, power lost, barges into overpasses and then this eerie nice weather that makes you almost forget what just happened. It was just as crazy trying to find fish, calling around, who had what, anyone have anything good??? And then, we had halibut and skate and everything was fine. Roller coasters are fun, no? Barf....
Anyway, this week is more predictable. We are bringing in some beautiful farmed rainbow trout!! This comes from our friends down in Colombia. Before you ask why not get domestic trout, I will jump in and tell you that that market is a mess, unfortunately. Lack of workers, low supply due to reductions in biomass due to shuttered restaurants here and just general chaos all around since PPP money has run out and few know where to go next.
Colombia, you say? Well, I will tell you that Central and South America have been quite active over the last 10 years investing in aquaculture in areas that have the natural resources and an available labor force that is very happy to have good paying jobs, relatively, and with long term stability to boot. The quality is superb. The technology is imported from Europe and Israel where they've really figured out how to do it with environmental considerations at the forefront. Sorry, folks. We are not the best at some things....
We will be bagging mostly fillets skin on, of course, but we do have some whole fish head on but bone out available for those who prefer that. Those will go early so keep an eye out for them. Great little recipe on our website. Think meuniere, almondine, mmmmm....
Another item we will bring back is Jonah crab claws. People absolutely loved them and that makes me so happy. The are the cheaper cousin to stone crab claws but not inferior to them at all. They are the claws from Dungeness crabs and frozen at sea and that's how they come to you. They are triple scored so that you can crack through to the meat. Back to littleneck clams this week and oysters will be Shiny Seas from PEI.
Oh, and a couple of plugs. Jill Weber has a radio show called Digging into Dining airing on Tuesday night at 6pm on SiriusXM channel 132 where we will be featured along with one of our customers. Also, quite possible an article may be coming out in the Inquirer this week by our very own mysterious food critic (and also one of our customers, believe it or not). Pretty cool and all due to your love and support. We love and support you back, people. The community we live in is amazing.
