Week of March 14, 2022 Small World Seafood Update
Hope everyone had a happy Pi day yesterday!!!
Pi is a magical number that runs into infinity in its decimal places. Yup. There is no end to it. On and on it goes. Kind of like a circle. Round and round and round and round. Kind of like the world right now although that feels more like a spiral than a circle. Round and down and round and down we go. Kind of like the fact that everything went crazy from Covid exactly 2 years ago (seems so so long ago, right?). . Kind of like the nonsense of trying to get to a level of normalcy yet problems of supply and demand, labor and quality, availability and price.
The bright side? We started this business two years ago as well and have gone through it all together. Now, we are all so friggin used to craziness already that we just shrug a big fat 'of course' at the next projectile flying toward our heads. We don't even get mad anymore. Lord, grant me the serenity to accept the things I cannot change....At least we all have each other. A wonderful community of caring people. That is pretty special. Thank you for being there for us in your hearts and dining rooms over the past two years. Happy anniversary and many more to come, as they say.
Anyway, on the other side of my brain, I am totally looking forward to the weather warming up this week and celebrating a little St Patty's Day in my own way which is the food way and not the drink way. I am thinking fish and chips and well as a fisherman's pie. What is a fisherman's pie? Well, you've heard of shepherd's pie using beef and/or lamb. There is a fisherman's pie using (what else?) seafood. Here is a great opportunity to use up some of the fish in your freezer or some of the stuff you will pick up this week. One thing we have been working on for fun is something loved in the British Isles. Smoked haddock fillet. This is fresh haddock that we smoke with El Camino Real in Northern Liberties. It is delicious cold but also dynamite sauteed in a little butter or you can fold some into the mashed potatoes you will be making to top off your fisherman's pie. Really tasty stuff. Or fold some into mash potatoes and make croquettes..Or put some on a nice slice of rye toast..
This week, the salmon salmon will be back to the Faroe Islands!! Yay! We love that stuff! Sushi grade so great for pokes and melt in your mouth good roasted in the oven. There are many things you can do with salmon and I've continued to add recipes to our searchable list on our website.
As for featured fish of the week, that's up in the air for now. Boats are starting to come in so we can see what shakes out.
We definitely know that it is clams week. Smoked Albacore tuna spread is around. Fish stock and shrimp stock are around. Hmmm..this could be a great weekend for paella.
And, well, I think that's all I got. Actually, one more thing. I met my wife, Eszter, 8 years ago on Saint Patty's day so this holiday is very meaningful to me in a whole different way. It was the night that my life changed forever. I love you baby. You are the best thing that's ever happened to me. Now, she says she reads my emails.....we'll see...hahaha...
