Week of Feb 28, 2022 Small World Seafood Update

Ok...winter's not over..I stand corrected...

How much fun did everyone have with sushi weekend!!! Saw so many people doing fabulous things over the weekend. Check out our Insta page and you'll see. Pretty amazing how good everyone is getting at cooking up restaurant quality food...at a third of the price in the end to boot..

Anyway, everyone in the seafood community is trying to assess how this Russian invasion will affect seafood commodities. We hope this ends quickly with no more destruction, displacement and pain.

Salmon is still messed up and will be a few more weeks, we hear. The prices for Atlantic salmon are through the roof and hitting prices I've honestly never seen. So, this week, we are going to visit our favorite cousin again, Arctic Char! Yes, so many of you who had never bought it from us before just raved about it and for good reason. This is one tasty salmon variety. Mild in flavor and delicate in texture. Also sushi grade so you can make your poke bowls with it or a crudo or a ceviche...

Our fish features of the week will be two great fish to have to kick off Lent if you are observing or even if you are not. The first is Rainbow trout from Idaho!! We will be doing something similar this time by offering these beautiful butterflied (meaning deboned) fish either head on or head off. So great for simply roasting or even pan searing, stuffing, meuniere, almondine, caper brown butter...so many ways..You will get 4 fish per order just like last time.

Second up is fresh haddock fillet!! This elegant fish from the New England waters is the perfect fish for a great fish fry. This is the most refined member of the cod family. Fish and chips sounds like a pretty good meal, no? Use our dredge and add beer till you get the consistency you like and fry away. make sure you have your thermometer set to 350-375F for frying for a crisp and non-greasy fried fish. or simply dredge the haddock and pan sear for an equally delish fish.

This week, once again, we will be selling our house made shrimp stock and clam juice. Lots of great feedback about them both and we are glad. Paellas, risottos, shrimp and grits, chowders...Speaking of clam juice, this week is fresh clams week. Not sure on oysters yet. Smoked albacore spread is around this week. That stuff is addictive, no? All the other usual suspects are around as well.

And there we have it. Just a heads up to everyone. We are close to launching a new website that will be more user friendly. The original one which we use now was never meant to do what it is that you want it to do. Specifically, the recipes page will be searchable and I can list the pertinent ones for the week for easy access. A little more patience but hopefully we could launch it this week if we can iron out a few bugs..
