Fun stuff this week!! As I've said recently, I love the transitions in seasonality and certain moments when we see something appear for a short time. There is a nice cycle to the year full of weaves and turns, hills and valleys, stops and starts. An orchestra of percussive rhythms, the way I feel it...
We've seen this once before around this time of year last year. Opah!!! Also known as moonfish (google it - such a beautiful fish), it is mostly found in the Pacific in small quantities and remains there where people love it. You rarely, if ever, see it in Philly. This fish is so interesting in that it has different types of meat that are prepared in different ways. There is what is known as the top rack which is super lean, light red in color and is eaten as sushi or sashimi. Delish. There is also the belly portion which is quite large and is typically roasted or braised and will melt in your mouth. I actually posted a great recipe for a soy ginger glazed opah belly which is to die for..We are selling each separately as well as blast freezing and vac packing them too. This may be the only chance to get it this year so don't waffle on it...
Also, coming to an end soon (we may see another pop but nothing is guaranteed) is halibut season. Well, we got a nice shot last week and portioned, blast froze and vac packed them. It freezes so well when we do it. Again, this may be the last chance this year so don't waffle on this either...
The last we brought in uni, or sea urchin, from the West Coast of Canada, we were floored. AA grade and totally living up to the standard, this is the best uni we've ever brought in. It is gorgeous. In fact, a couple of people who picked up at the shop came right back to get more! We almost never see that...That season will be ending soon as well.
But not everything is coming to an end. We have more branzini butterflied for you guys. I think it is a staple now for a lot of you..We have more blast frozen whole daurades scaled and gutted. Love whole fish.
We have gorgeous Faroe Island salmon coming to you as well as Hokkaido scallops. Both sushi grade and both available fresh or blast frozen (still sushi grade by the way).
And to quiet down the soft murmurring anguish of withdrawal, we have South African lobster tails! The best of the best. Meatier than any other lobster tail out there and absolutely delish. Check out my recipe on our site for splitting them and pan searing and don't forget to get your Bibou butter...
And, some great blast frozen options just for you guys are also on the docket so have at it!!
Littleneck clams are the shellfish of the week along with PEI mussels. Grab some pasta and cook away. Best cheap meal ever. Savage Blonds are the oysters this week from PEI. Exciting. These babies are just plump and juicy...
See what I mean?? All this good to stuff to choose from.... Life is good...
And don't forget your frozen shrimp and condiments and sauces...And dog treats for doggies...
I know, I know. Lots of words but, hey, consider the alternative...
