Hello everybody!!
The Year of Snake began yesterday and symbolizes renewal and regeneration. They shed their skin, after all, to form a more beautiful and vibrant pattern. Although in the West, the snake is more associated with the Garden of Eden story, in the East, the year of the Snake is expected to be one of positive transformation as we move on from our hard skinned selves into new beginnings. Happy Lunar New Year everybody!!
Okay, let's celebrate with some fish!!! First up, fresh yellowfin tuna from Florida! The migratory route of one of our favorite fish is hitting it's southernmost point before travelling back up to Maine and Canada in the Spring. Great stuff. Also known as Ahi tuna on sushi menus...have fun with it! Poke bowls, baby!!!
From Japan, blast frozen corvina!!! This fish is one tasty frim fish with a flaky texture. This fish has many names including Meagre (pronounced mee-gray) as it is known in Greece. This particular shot of wild fish is killed using a technique known as Ike Jime which is the most humane technique known for fish. it is also beneficial to maintaining the quality of the fish since it prevents stress and lactic acid from affecting the meat and toughening it up. It is super rare to get something like this here so take advantage...
Also to take advantage, fresh AA uni from Canada!! These 100g trays are always a hit with people who love fresh sea urchin roe. This stuff is top notch!! These are limited in quantity..
From local shores, fresh fluke fillet!! Fluke is our local version of flounder and is one of my favorite fish to eat. So simple, versatile, elegant. Plus, it is also sushi grade so great for ceviches!!! The winter is the best time for this fish. The waters are cold. They are not in migratory mode. They are just fattening up. They are at their most delicious. There. Oh. And stuff it with a fishcake? Yeah...
Butterflied branzini, whole scaled and gutted daurades, cod cheeks, fresh sardines, barbouni and rock shrimp round out the mix.
Yes on Faroe Island salmon and Hokkaido scallops. Both fresh and blast frozen plus both sushi grade...
We have some halibut cheeks that we blast froze last week. Bigger than cod cheeks and a real treat.
And for a special item this week, smoked spicy chorizo sausage from El Camino! Great for a nice clam dish, great for a seafood paella, great for a nice shrimp a la gallega kind of thing...
Littleneck clams and PEI mussels are the shellfish of the week. Great to go along with Matt's fresh organic spinach linguini which is back. We also have more lobster ravioli which no one would be sad to have.
See what I mean?? All this good to stuff to choose from.... Life is good...
And don't forget your frozen shrimp and condiments and sauces...And dog treats for doggies...
