It's cold out there! Wow. What a dry, biting air. But, if you haven't noticed, days are getting a big longer every day and the sun seems to be shining a touch brighter every day as well...Ahhh...going in the right direction..It's practically July 4th...
Anyway, let's warm up the soul with food!!! This week, we got some gorgeous fresh albacore tunas from North Carolina!! These little beauties range in color from ruby to cream and will just melt in your mouth. Albacores are one of the smaller types of tunas but are known for their high fat content which gives it flavor and texture. It is also why you see it in cans packed in oil because the fat content keeps it moist. Really good stuff..Try poaching the stuff. Whether in oil or in a sauce. Friggin amazing. Half for the poke bowl, half for the Salade Nicoise...
As I stated earlier in the week, no Faroe Island salmon fresh this week though we do have blast frozen for the diehards. Instead, Steelhead trout is back! From Scotland and just a beautiful cousin of the Atlantic salmon, it cookes up just like it, has an orange hue closer to a mandarin orange so really pretty and is sushi grade! Plus, the high fat content means it will just melt on the tongue. This week, we will offer up whole sides as well which range from 2-3lb each. Everyone raved over it a few weeks back and for good reason. Jump on it..
Branzini butterflied are back. Cod cheeks are around. Fresh as well as blast frozen Hokkaido scallops are available. Wild rock shrimp is still around...
And then the fun stuff for those who like fun stuff. We have more barbouni (also known as red mullet and Rouget) whole and scaled and gutted. Fry them up, close your eyes and think of Greece...
We have fresh sardines from Morocco once again. Those who are more familiar with Portuguese sardines should know these are the same. These little fishies migrate up and down and right now are in Morocco. Gutted and head on.
Boston mackerel fillet! One of the smaller mackerels out there and mild in flavor, these fillets are super flavorful and really good eats. A little dredge, a little pan fry, a little caper brown butter...See where I'm going with this?
So, once again, no ground beef this week but that will come around again next week. They were at a farm show last week. No more lobster ravioli for now but we are bringing back shrimp and crab canneloni! And we still have a bunch of tuna/halibut meatballs in arabbiata sauce! That seafood stock was a hit last week so we will have more going forward..
Littleneck clams and PEI mussels are the shellfish of the week. Great to go along with Matt's fresh organic spinach linguini which is back. We also have more lobster ravioli which no one would be sad to have.
See what I mean?? All this good to stuff to choose from.... Life is good...
And don't forget your frozen shrimp and condiments and sauces...And dog treats for doggies...
I know, I know. Lots of words but, hey, consider the alternative...
