Well, tell me that the sun doesn't look brighter out there..It's a little early and we still have a few cold days ahead of us but it is feeling like spring to me. Ahhhh...longer days...

What better way to kick off spring than wil sushi grade local USA fresh albacore tuna!! This tuna is gorgeous and just such a treat. It is the smallest of the prized sushi tunas and also the cheapest, relatively, which is just a bonus. It is no less tasty. In fact, the higher fat content of this fish gives it a creaminess that yeloowfin or bigeye don't have. You can make tartares, you can make crudos, you make make sushi rolls, you can make poke bowls. You can poach and cook it in a sauce or broth and it won't toughen up. You can eat half raw and cook up the other half to make a puttanesca. Versatility, baby..Oh, and don't forget our ponzu and tobikkos..just saying..

Also on the docket and local New Jersey is fresh fluke flounder fillet! Now, I am so happy that many of you have grown to love this fish. It sounds a little meh to say you want flounder but this isn't your flounder from the sole family. This is fluke, baby cousin to halibut with a firmness and sweetness to match. Also, it is sushi grade too. This fish is also quite versatile. You can slice some up and eat raw, yes, or dredge some up and pan fry to get a nice crisp on it. Or roast in in a 425F oven for 12-15 minutes with olive oil, garlic, salt pepper, spices. Or stuff it with some crab cake mix or fish cake, roll it up and roast for 15 minutes! Devine...

What would sushi night be without salmon? When you have Faroe Island salmon from our partners there, you have the best of the best. Or our Hokkaido dry sea scallops? They have been so big lately. Perfect sear or slice them up for a gorgeous crudo or ceviche sprinkled with a little paddlefish roe...yum!

Mussels are the shellfish of the week. For those who like making a red sauce with them, toss in a couple of tablespoons of either lonsa to send flavors up to the moon. Trust me. Oysters are Savage Blonds from PEI.

Sometimes nature throws soemthing your way and you gotta be ready to grab it. Turns out that mushrooms over at Mycopolitan in Northeast Philly just wanted to all pop up at the same time. They have tons of them. So, we are going to discount them this week to $12 per pound. They need to move some. Small World Seafood special!!!

And don't forget your frozen shrimp, pasteurized crab meat and condiments and sauces...And dog treats for doggies...
