February 1, 2023 Fairmount/444 N 4th St Order Form

Hello everybody!!!

Well, so much good stuff this week to load up on! And a one new feature category for the Valentine's Day season which is the next two weeks. Boy, the weekend before that holiday is the Super Bowl so lots of people will have to manage the possible minefield of romantic dinner or Super Bowl party...I say be creative and combine them!! We will have most of the stuff available next week too but for those who need it now or don't want to risk it...

But first, for the present. The fresh feature of the week is fluke flounder fillet!! So many of you have been raving about the winter fluke. It is the best. Thicker, meatier, fattier, more flavorfuller...and cheaper. I mean, how many wins can you pack into it? Pan fry it, roast it in the oven at 425F for 15 minutes with seasoning, garlic, olive oil or, my favorite, stuff it with crab cake filling or fish cake! great stuff and sushi grade!

Speaking of sushi grade, frozen Japanese hamachi loins!! Also known as yellowtail in sushi restos, this comes to you skin off, boneless and ready to slice up for a delish crudo! How to do that? Slice thin, top with jalapenos, sprinkle with our ponzu sauce and shovel it!! Or try your hand at rolls! Nailing the sushi rice is the hardest part but well worth the learning.

We have 5/6oz Maine lobster tails!! These come raw and frozen, two to an order, and are excellent! We are starting to see the market for these tighten up so prices will begin to go up. Right now, great deal for this size! Check out my video on our website for how to split them and sear in a pan with Bibou butter. Just terrific. Trust me.

And then our fun section of the week...fish eggs!!! Well, caviar if you want to be posh. We have 6 different types for you guys that have different applications. There is the sevruga and kuluga which is the straight caviar on a blini kind of caviar. There is the paddlefish caviar and trout caviar which is the topping something to add flavor kind of thing. And there is the red and wasabi tobikkos which are the add crunch, color and texture to your poke bowls, sushi rolls or whatever. The Martha Stewart sandwich at Russ & Daughters in New York City is smoked salmon and wasabi tobikko! She's classy..And with its green color and the Eagles? Think about it...Shelf lives and freezability are listed for each item.

Yes we have Faroe island salmon. Yes we have Hokkaido scallops. Yes both are sushi grade as well. We have mussels on the menu this week for shellfish. It's going to be cold this week and a bowl of that stuff would hit the mark. Oysters are Sand Dunes from PEI. We made a classic kippered salmon for you guys. So good. Mycopolitan mushrooms are around.

Oh...and Shevy's babka kit...

And don't forget your frozen shrimp, pasteurized crab meat (good in the fridge for a year) and condiments and sauces...And dog treats for doggies...

All the other usual suspects are around as well so have fun, take your time, hurry up and get your order in!

Here is the order form. Bring a bag! Bring a bag! Bring a bag!
