Well, we will be welcoming the Year of the Rabbit on Sunday! Hear to a year of Hope, prosperity and tranquility!! Boy, I don't know about you but i am certainly ready for a little Yin in my life...
Aaanyway, As I stated in the earlier email this week, high winds up the Eastern seaboard has limited the catch available out of the sea. So, let's go to the lakes!!! Canadian side. We have some gorgeous Walleye fillets boneless and a real treat. In fact, I don't think anyone in Philly has access to fresh walleye so you are part of an exclusive club indeed. This can be pan seared, deep fried, grilled, cooked in parchment, or roasted in the oven. Very versatile and, oh, the mild sweet flavor of this fish..Those of you from the Midwest know. This fish is good!
Also from the lakes and around for a short while primarily from the end of November into parts of February are more smelts!!! These little fish aren't just for Christmas, you know? They come head off and cleaned. We blast freeze and pack them for you so you can fry up however many you want when you want it.
Faroe island salmon has been looking gorgeous lately. The cold waters, the cold weather, just perfect! Sushi grade so perfect for poke bowls or tartares. But, hey, it roasts up so beautifully and so moist too. This is great salmon, people. It really is.
Same with our Hokkaido sea scallops. Sear up perfectly (check out our vid on our website) and can also be sliced and eaten raw as a crudo or ceviche.. Just the best of the best.
Daurade is the blast frozen whole fish of the week. That fish has beeen loved by all and for good reason. At this price compared to what you would pay in a resto? Come on! You beat the market, baby!!
We added blue crab stock to the list, too! This stock is perfect for risottos, bisques or a crab pastaa dish. You know how you add clam juice to clams? Add crab stock with crab meat...droooooool.....
We still have some frozen grouper available. Great stuff. We have individually frozen squid tubes. Also easy and fun. Plenty of fishcakes and shumai.
The labneh has been a real eye-opener for those who have had it. This is the real deal stuff. Not some labneh produced with an inferior yogurt to start,. This is made in the Armenian tradition (arguably the best of the best) using the best milk to start with. That's why it is so good. And the garlic and spicy Lonsas by Aaji's? I think it come be a little scary to not always have some in the fridge...just saying..
Mussels are the shellfish of the week. They have been plump and outstanding lately. As have the oysters. Fortune Oysters are on hand from PEI. To bring in the new year, you know? And we added smoked trout fillets to the smoked list. Great on its own but try making a seafood soup or stew with some of this to add a little smokiness. Along with some other fish you need to use up in your freezer. Just a delicious wintery bowl of comfort...
And don't forget your frozen shrimp, pasteurized crab meat (good in the fridge for a year) and condiments and sauces...And dog treats for doggies...
