Week of January 31, 2022 Update

Well, what a storm!! It was really wild looking at two meteorological systems that were pretty mild just combine in the Atlantic Ocean and quickly combine to become this monster heading up the coast! Now we only got 6 inches of snow or so in Philly. I flew back from Boston yesterday.  Went up Sunday to help move my son and his girlfriend to Beantown. We think 6 inches is a pain in the ass? How about two feet and parking spot wars..Well, there you have it. Someone's always got it worse so be thankful.

Now, with this system moving in, of course boats couldn't be out over the weekend but they headed out yesterday with more going out today. So, not quite sure about the whole mix for the week but we anticipated some uncertainty so we worked out a supply for fresh rainbow trout from Idaho!! So, we will be selling butterflied, head on trout. What that means is that the bones have been removed but the head remains. What THAT means is t hat you can roast it and stuff it and not worry about the bones. What is also means is that you can cut off the head and have a pretty butterflied fillet. For those who are squeamish about the heads, get over it. Fish have heads..

We will have crab meat again this week. It went over so well last week that we thought some of you who couldn't would want to. We will also have more scallops. I mean, they are so good we want them so...

Clams are the shellfish of the week. Oysters will be Irish Points. Scallops will be back. Such a beautiful use of them by you all. Check out our insta page to see. All the other usual suspects will be around as well.

Well, we will also be featuring a couple of really tasty smoked fish items this week we are making in collaboration with El Camino in Northern Liberties. The first is our ridiculously good Ocean smoked fish salad. This is a cousin to the whitefish salad we get from Acme in Brooklyn but using salt water fish instead of fresh water fish. Haddock, Spanish mackerel and Albacore tuna. I mean, just delish.

Also, we made a kobayaki kippered salmon a few weeks ago that was so well received that we decided to try another variation. So, you know how you guys love the miso glaze with the salmon? Well, we made a hot smoked Faroe Island salmon cured and glazed with our miso glaze!! Ok, you have to try it..seriously.

Which brings me to mentioning that tomorrow is the start of the Lunar New Year which will be celebrated by billions of people all over the world and we should celebrate too. You see, we are moving from the Year of the Ox, a year symbolized by persistence and determination into the Year of the Tiger, a year symbolized by courage and strength and confidence. This year, we take on its characteristics and learn how to navigate through our world with the same fearlessness that a tiger has when walking through the jungle.
