Week of Dec 27, 2021 Small World Seafood Update

Quick note. Ordering and delivery will be moved up by one day this week, same as last. So, order Tuesday and pick up Wednesday for Fairmount/444 N 4th st or order Wednesday, pick up Thursday for Fitler/Rittenhouse/Washington Sq. Same locations and same time slots.

Well, another weird holiday past us. They've always been kinda weird on one way or another before covid but now they are weird in a quiet way. No fights, no drunken episodes, no political rifts and arguments. Well, maybe on second thought.....hahaha!! Lordy lordy...

Anyway, time keeps on ticking into the future and there's nothing we can do about that so we are just gonna do what we do. Coming up on New Year's eve is usually special but somehow it feels a little more special. Hopefully, 2022 is the year that we learn how to adjust to living with this thing and it doesn't threaten us as it did before thanks to vaccines, medical breakthroughs, etc. nor will it disrupt our lives too much as we determine where to find our comfort zones. But then again, my crystal ball has been broken for two years so what the hell do I know? hahaha..

Looking back on this year, we saw so much growth on your culinary journeys. Everyone's skills definitely increased as did your photography of said dishes. Our insta page (@smallworldseafood) is full of proof of that. 

One significant thing we did this year was begin to introduce sauces and glazes to help save time and cook world class dinners. The first item we made will go down as the 'Marinade of the Year' for 2021. Miso glaze. We are so happy that you all love this. So many of you used it for sablefish to make you Japanese Black Cod dishes and so many of you continued to use it for salmon. Ponzu sauce gets an honorable mention for pairing off so well with raw fish but really going so well with our shrimp shumai.

So, onto the seafood selection for the week. First off, we will be selling Canadian lobster tails!! These 4oz tails come frozen, two per order. We have to celebrate making it through another year, no? Lots of ways to prepare this but my favorite way is split down the middle all the way through and sauteed finished off with Bibou butter. Next up on the list of seafood, speaking of miso glaze, will be sablefish!! Yes, this fish also known to most of you as Black Cod from restaurant menus is the perfect fish to cook up this week. First of all, you can start marinating it right after you bring it home to give it a couple of days to cure. The Nobu method is to marinade for three days but a couple of days or a day before is perfectly fine. 

Also available, by popular demand is dry sea scallops. Now, we do have a shot of them available to us this week but they ain't cheap. On the other hand, it's the holiday and whatever. Whoever wants some, get some. We will sell them in 1lb increments instead of two.

We sold some smoked albacore tuna salad a few weeks ago to some pretty great reviews. After that, we got to talking to Owen at El Camino about trying something a little different. You see, the regular whitefish salad that we normally see, which we all love, is made from FRESH water fish such as pike, carp and whitefish. We thought it would be cool to make a SEA water fish salad using haddock, Spanish mackerel and Albacore tuna. Well, this stuff is delish! So if you feel like doing a side by side or just trying it out, here is something fun to try. Made by us and nothing like it anywhere.

As the timing of the week doesn't work to optimize freshness for mussels, we will be selling live clams this week once again. Oysters will be Pink Moons from PEI. Mycopolitan mushrooms are around. All the other usual suspects are available and we may have another one or two things special if they pan out.
