Blah, blah, blah, something funny. Blah, blah, blah, something cute. Blah, blah, blah, something thoughtful. Ok, now let's get right into it..hahahaha.(ah, i make myself laugh, I swear)

So if you haven't read Monday's email, please go to it. You can find it on the website. It goes through the seafood items for the week. remember, we are closed next week for Thanksgiving so this is the  last chance til we see you again in two weeks. Quick note about smoked fish. We bring it in every week so you get the freshest. The shelf life on both the smoked salmon and whitefish salad is 1 month. You can freeze the smoked salmon but not the whitefish salad.

One fish item I forgot to mention in the last email is a dashi broth that we made for you all. Dashi is a Japanese broth made from Kombu (dried kelp for taste of the sea) and kastuobushi (cured and dried smoked bonito or skipjack tuna shavings for fish umami flavor). Now, dashi is extremely versatile as a fish broth base. Its most common use is as miso soup. Yup, dashi plus white miso paste makes miso soup. This will taste very different from the inexpensive type you find in many sushi places who choose to use dashi powder or flakes to make this base. What we make is the real thing. You can also use it in other ways such as adding veggies to the broth and simmering with shrimp or even shrimp shumai!! For the adventurous, put a twist on your cioppino or bouillabaisse. 

So, first special item of the week is Chocolate babka from our good friend Shevy from Shevy's Paradise up in Fairmount. This is by almost everyone's account, the best chocolate babka ever made. We agree. She makes all kinds of kosher goodies which you can also buy directly from her.

Second is pie dough from Oui Pastries in Old City. Yeah, you can make your own but this is her specialty so...you will get 4 8oz balls of dough for a total of two pounds. We've frozen it for you to extend shelf life. Now, each ball can be rolled out for 1 pie shell but, hey, pie dough is so versatile. Think pot pies, turnovers, mini tarts on a muffin tin and even the hors d'oeuvre of hors d'oeuvres, pigs in a blanket...

Escargots. This is a luxurious way to start a meal for sure! These snails imported from France come 2 dozen to a tin. They are already cooked but could use some jujing. As will most things, we have a recipe for that. Store in your pantry til 2024 and use anytime. Now that would make a nice kind of pot pie, no? Or, saute with some of Bibou's parsley garlic butter, grab a baguette and go to town..

Mycopolitan mushrooms. Speaking of escargots, mushrooms couldn't be a more perfect pairing. These mushrooms are grown and harvested right here in Philly. You will get a variety in a 1lb bag. Really meaty and just delicious.

Cheese. We love Stefanie, owner of Valley Milkhouse located in Oley, PA. She makes some mighty fine cheese and we are delighted to be able to bring you a couple. You will get two cheeses, Lady€™s Slipper - a farmhouse tomme washed with cider lees from nearby Frecon Orchards. This is an aromatic, buttery raw milk cheese aged 3 months. Lovely for melting over potatoes and making fondue, or paired with briney pickles and ferments.
Clover - a fromage blanc. This is a tart, creamy, spreadable fresh cheese that€™s the perfect blank canvas for chutneys, preserves, ferments and smoked fish. Local, crafty, real. We love that.

Aaji's Tomato Lonsa. We ran this a couple of weeks ago to rave reviews. A great fresh tomato base that can be eaten as a spread on toast or with cheese, to top off seafood or other meats or to use a a base to make a sauce. A Fairmount family makes this and we are glad to represent.

Smoked meats. We paired up with El Camino Real in Northern Liberties again to bring you cooked smoked sausages. You will get two packs, one Texas style chorizo and the other Texas style Polish sausage. This stuff is dynamite good on its own but rather amazing when combined to make a shrimp dish, some eggs or even for your stuffing. The sausages are frozen for you to use when you want. 

Also, available this week from them is Canadian Bacon!! You will get one pound sliced thick of probably the best Canadian bacon I have ever had and I'm Canadian!! It comes in a vac pack and needs to be refrigerated and it'll be good for a month or freeze it and use whenever. Trust me on this one people..

Cedar Planks. Well, a few weeks back, a customer of ours, Jaymie, stopped into the shop to pick up his order and we got into talking about smoking fish and planking. He told me that he is a professional woodworker in Kensington (Craftwork Home) and gets scrap cedar and uses them for fish and veggies. The gears in our brains kicked up and we thought, would we , could we? Well, we are. Now, this is the thing with these cedar planks. They are not like the supermarket or Home Depot kind. These are large planks measuring around 13 inches by 5.5 inches and almost an inch thick. What that means is that you can reuse these planks 6 to 8 times or so. This is the real deal. He even printed out a card that comes with to give you instructions on how to use plus he made a video which we will post on our recipe page.
