Hello, everyone! I feel like everything is speeding up again like it was pre-Covid. Ugh...In a weird way, I am almost nostalgic for empty streets, no traffic, quiet nights at home and no rushing. Memory can be funny thing.
Anyway, let's start with salmon! I forgot to mention which salmon we would be featuring this week and the crowd went wild! Relax people. We have salmon. In fact, we have 'salmon salmon' coming from one of our favorite farms in Patagonia, Chile. These beautiful fillets are sushi grade but terrific for roasting or glazing with our miso glaze for a table wow. Happy now? Good. As long as you are happy, I'm happy.
Next up is Canadian swordfish! Everybody's favorite sword. I am sooo happy that people have finally been converted to loving swordfish. I know that the sword you had been eating was cheap stuff coming from far off. We don't believe in that. Fresh sword from cold, clean waters is like nothing else. So many ways to cook it. Kind of like chicken breast if you think about it. We have a few recipes for sword on our website but here is another I've added. Swordfish Piccata.

Also on the list of fresh fish that people have been amazed to discover that they love, Spanish mackerel fillets!. This is not the intense pungent mackerel you may have had. Spanish mackerel is famous for it's delicate flavor and versatility. It can be grilled, pan seared, broiled, ceviched (yes, ceviche), miso glazed, Mediterranean marinated or this..polenta crusted.

Dry sea scallops are around but for not much longer, me thinks. Take advantage while you can. They have been gorge a l'orange. Also, you can eat them raw or crudo. Definitely. Add our ponzu and you'll be in heaven.
Also, a special item is mushrooms!! Mycopolitan mushrooms are grown and harvested right here in Philly. You won't get fresher and tastier mushrooms. You get 3 per 1lb bag. get them
Clams are the shellfish of the week. Oysters are Conway Royals from PEI. Nice wild oysters from up there. Shrimp shumai are dying to be dumped into our ponzu sauce. Cod is the frozen fish of the week. Lot's of great feedback on the new smoked salmon. Keep it up.
And I think that's it. Listen, life will speed up but we can do something about that. Go to a show. A concert. A dance recital. Connect to happy people. I went to opening night for the Philadelphia Orchestra last night at the Kimmel featuring Yo-Yo Ma and it was electrifying and hopeful. We need more of that. The artists will save our soul.
