July 22, 2021 FIT/RITT/WASH SQUARES ORDER FORM

 Hello everybody!!

We have a few fun things for this week. First off, fresh Arctic char fillet is back!!! This sushi grade fish is a smaller cousin within the salmon family. It is farm raised sustainably in the pristine waters of Iceland. Get your poke bowls fired up!! Or simply cook it like you would salmon. Same deal.

Also, on the menu is fresh cod fillet. We usually have the frozen which is of high restaurant quality but once in a while, it's nice to move over to the fresh. Especially at this time of year when areas with colder waters are able to open for fishing. This cod comes from Alaska and has nice firmness as well as a dense texture. We love it for fish and chips 9use our seasoned dredge here). I also love it with sauteed leafy greens and just steamed in a pan with some broth or white wine with the lid on at low heat until done. Yummy!

Peruvian dry bay scallops are back in town but with limited quantities. As many of you have noticed, sea scallops fetch a small ransom right now with prices higher than anyone has ever seen. These bays are a nice substitute to satisfy the craving and a helluva lot cheaper. As always, we have some great recipes on our website, smallworldseafood.com.

Mussels are the shellfish of the week. Oysters are pretty Sand Dunes from PEI. Waters are getting warmer through Massachusetts which makes it spotty for oysters in my opinion. We will focus further north to sat safe. 

A few special features this week. One is shrimp stock. Lots of you have been making paellas and nothing, I mean nothing, goes better as a stock than shrimp stock. That is the gamechanger when making it. Since we have stock, we thought grits wouldn't be out of the question so we will again be selling Castle Valley Mill Bloody Butcher grits. These come from heirloom non-gmo corn milled in Bucks county. 

Lastly, bacon. El Camino made some terrific sausage for us a few weeks ago. You can definitely taste the difference when smoking is done right. This bacon is not at all like store bought. First of all, store bought is pork belly cold smoked and sliced. When you cook it, you will lose at least half the weight. This bacon from El Camino is cured for 4 weeks removing much of the moisture and THEN cold smoked. When you cook it, it hardy purges and fat. It's nothing short of amazing. It cost more but you end up with more. And no crappy stuff added. 

Lastly, lastly, don't forget your pets. We will continue to sell treats made in conjunction with Melmos Treats. They use the trim we produce, mix it with Love City Brewery spent grain and flax and make these delicious treats your pets will love. And then you won't have to share your food...win, win..
