JUNE 22, 2021 SEAFOOD UPDATE

 HELLO EVERYBODY!!!!!

What a nice weekend of cooking and outdoorsy stuff and dad appreciationing (which really means leave him alone)...So many people happy Atlantic salmon returned to make an appearance...

One quick note, we will be closed for vacation the week after July 4th for that one week. Crappy fish that week anyway. So, next week is the final week before the break and we will have some fun stuff for you then too. We will start right back up the following the week of the 12th of July.

The seafood world is morphing into crazy world from its recent state of goofy world. Surging demand everywhere plus limited supply is causing shortages of inventory on so many items and categories. Think scallops, crab, lobster, salmon but it is starting to affect other items such as shrimp and squid and tuna and so on. The frozen market has always supported pricing for fresh items. We are in this weird Gamestop like place where since everything is so high in price, very few want to commit to buying large quantities because they fear a big drop in a few months where they could lose their shirts. So, fewer buyers means less supply resulting in high prices which means less buyers. Broken supply loop. 

Add to that, recent shut downs in major Chinese ports causing massive delays in products coming our way. Basically, we are in for a mess of a roller coaster ride probably not levelling off until fall 2022, according to economists and industry analysts just about everything. Crazy, right? And  I went out with my son Saturday to try to help him buy a used car. HA! The salesman to me....

Anyway, as always, we navigate the treacherous waters to find you the best things out there and usually, we do pretty well. This week, we managed to get a commitment from one of our suppliers in North Carolina for some Spanish Mackerel!! Yay!! It's been the favorite of many of you out there and we are glad we could turn you onto this fish. We have a couple of great recipes on our website for this tasty treat. It grilles really well, FYI. And, wanna make some crudo or ceviche with it? Definitely..

Also on the menu this week is a first timer of a fish with us. And we love it. Sooo good. It is a fish called Greenland Turbot. These little beauties are stellar quality and come frozen, head off, cleaned and gutted. They range in weight from 2-4 pounds each. Kind of like the octopus. Like the octopus, though, it yields a lower amount of meat when it is cooked. So, it feeds, generally, about 1lb whole per person. Just to give you an idea. I would definitely roast it whole at low temperature (300-350F). The meat slides right off and there are very few bones to worry about. What does it taste like, you ask? Well, the turbot part is mainly a marketing term applied in the US since it looks like turbot but it is, in fact, in the halibut family and tastes like it, too! I will post a video to the website. So easy to prepare, beautiful presentation and sooooo moist and delicious!!! A real winner. And since it has variable weight, we will do the same as with the octo; charge you $1 per fish you want and work out the balance due at the truck.

Lastly, on the board is grey sole fillet! This sole is a little firmer than the sweet yellowtail sole we sold a few weeks back. Also, these fillets are nice and small and so versatile. You can dredge them and pan fry, you can bake them. You can broil them. You can stuf them. You can batter them and fry them up for fish and chips. Lots of ideas...

Mussels are the shellfish of the week. Oysters are Shiny Seas from PEI. Snow crab meat is still with us. Aaaaaaaand, that's it..I think...we'll see if I can scrounge up something else...
