 HELLO EVERYBODY!!

Some people hate change. Not me. I love the excitement of moving from one season to another. From a level of comfort to a level of novelty. Yes, I know. There is risk involved. Yes, I know, it can be scary to move from the certain to the potentially uncertain or at least different. Now, don't get me wrong. That's not with everything but it definitely is with food. I LOVE the cycles through the year of foods and cravings as much as I love the change of the seasons themselves. So, as we at the beginning of a new cycle from whence we started, I not only look forward to new items but to new preparations. Sometimes just changing HOW you prepare something can create that change. Creativity is fun!

Anyway, this week, we have beautiful Spanish mackerel fillets. These fish come from Florida's Atlantic coast and are just terrific eating. I like to describe it as tasting something like in between trout and a sardine. It takes beautifully to grilling as well as pan searing. I grilled some up last night and my wife said it was the best fish I ever made. (Disclaimer: she says that every time..). Here is a great recipe you can find on our site, smallworldseafood.com. This video also provides a great technique for making an intense red curry sauce. Grill the fish if you can for extra pow.

Next is Black sea bass fillet. These beautiful fillets come from the Jersey boys. It's been such a treat to cook and eat this highly regarded fish. In fact, it is usually on top of the favorite list for most chefs in top restaurants. I posted a recipe a couple of days ago that you can find on the website as well.

Salmon is looking really nice. Maybe a miso glaze to change things up? Or make that red curry with it. Mussels are ready to get drunk in your broths. Oysters are Acadian Pearls from PEI, and you know what? They are.

Aaaaaaand, that's about it. I think I had too much coffee this morning. Or maybe I'm just excited about what's here and what's coming up. (lots of good stuff- shhhhh, don't tell anybody). Here is the order form.

See you tomorrow.
