 HELLO EVERYBODY!!

More of this winter nonsense.. Well, look at it this way. If we didn't have this to complain about, we would have nothing better to do. Hahaha..We're not Texas, folks. Ughhh...thoughts and prayers down there. For real. No heat, burst water pipes. No bueno. Tomorrow will be fine for delivery. Just a little messy. 

One bad thing about a storm coming like this is that it causes a little havoc with suppliers delivering to us. So, unfortunately, we will not have mussels for you guys this week since that truck usually arrives today and they cancelled the run. Also, Castle Valley Mill in Bucks County won't make it down either with grits this week for you so we will do it for you all next week. The GOOD thing about the weather is that product can take a dip in price. So, you are the beneficiary of cheaper fluke and speckled trout. $11lb and $12lb respectively. That's nothing to complain about, my friends.

Well, this speckled trout is looking gorge. Really. This is such a swell time of year for lots of fish because they are just chilling (literally, the waters are much colder), eating and fattening up. Just like us..Hahaha..That means more meat on the bone and more fat for flavor. They haven't started their yearly migrations to lay eggs, yet. Most species don't have them yet even, but it's starting (I know some of you are thinking shad when I mention eggs. Yes, we will be doing shad fillets in a few weeks. Stay tuned) Trout fillets will be skin on and bone out.

Also, the fluke from Jersey is just as beautiful! For those who haven't had fluke before, this is what we call flounder but it isn't like the the more familiar sole flounder. This is a delicacy of a fish more related to halibut. So easy and quick to cook. You can even make ceviche or a crudo with it. Next is a little bit about a feature that was supposed to be for this week. Castle Valley Mill in Doylestown PA mills some of the best flour and corn in the area (castlevalleymill.com). Yup, some people still have the integrity to stone grind things. We are featuring their Bloody Butcher grits NEXT week. A 10oz container goes a long way and using our shrimp stock made by El Camino Real in Northern Liberties, you can make a real killer shrimp and grits. Recipe on the site.

We are using another one of their products, yellow cornmeal, which we have, to round out our usual flour dredge to give you more texture and a nuttier flavor if you want to try it out with the trout and fluke. Heck, you can use it for scallops, squid or shrimp too!! it is so friggin good. Now, here's a reminder of how to use dredge properly from a previous email.

Lastly, we are doing our monthly fund raising thing this week for The Ethical Society in Rittenhouse Square. This organization has been around since the 1880's serving the minds and souls of Philadelphians. The discussions they presentations they present are full of intelligent, considerate and thoughtful points of view. That is certainly rare in these times. They also provide space for small groups who hold events and on going sessions that enrich the spirit. It is an underrated, often overlooked member of our community. They could use a little acknowledgement that they are appreciated. You don't have to go crazy. We are just passing the hat around here to say thank you. That's all.
