HELLO, EVERYBODY!!!
What.... the.....f--k.....That reminded me of a crazy old girlfriend that wouldn't leave my house after we broke up..oh, the drama...
Well, this is the first order form of the year!! Yay!!! Everyone has resolutions and i wish you well with all of them. Truly. Whatever it is, you can do it!!
We finally got some notice from boats coming in yesterday, today and tomorrow so we will be good on a couple of local fish which is always our preference. The first feature is fluke fillet, skin off and boneless. This fish, for those who are not familiar with it, is our area's version of flounder. It is a thin fillet that lends itself to so may preparations from broiling to baking to pan frying, etc. This isn't the shitty frozen flounder your mamma used to make. It is quite delicious and sucks up whatever flavor you marry it with. Think Bibou's parsley butter. Wow. Of course, a classic preparation for the Jersey Shore, of which we are all dreaming about right now, can really bring us there. Here is a recipe we've posted before. It's worth a watch for sure.

The next fish is Black sea bass fillet, skin on and boneless. This has been a crowd favorite and for good reason. Such a beautiful skin, sweet meat and super easy to cook. We have a great recipe on our website, smallworldseafood.com by the Chef from Gramercy Tavern that shows you how simple it can be. But be creative, you can prepare the red curry sauce from the Spanish mackerel recipe, top it with the black sea bass fillet and Voila!!
Mussels are here this week. Oysters are Saint Simons from New Brunswick, Canada, and one of the cleanest finishes on a bivalve. Fish stock is still here and parsley butter for everyone!!
