 There are times when the cosmos seems so chaotic and then something beautiful happens. Some of you have had problems receiving the order form email. Mostly those with comcast email. We've been trying to field  calls from upset people thinking we removed them from the list or screwed up somehow when, in fact, it was something comcast was flagging. The I get an email from one of our customers and neighbor, Chelsea, saying that she works for comcast and knows the email engineers and will reach out to them to fix the problem. What?????? True story and Small World indeed. Thanks Chelsea!!!

So, I promised a little info on salmon. The fresh salmon that most of us are familiar with and of which we have been carrying is a species called Atlantic Salmon. This species is farmed in Norway (Norwegian salmon), Scotland (Scottish salmon), Chile (Chilean salmon) and Canada (Canadian salmon). All of it is the same species. Altantic salmon even though this species is farmed  in Canada and Chile in the Pacific Ocean. Go figure. 

From May until October (generally speaking), other varieties of salmon are caught in the wild in British Columbia and Alaska. King Salmon (also called Chinooks) are  the biggest of the  bunch and, therefore, kings. Coho salmon which are midsize and should be coming around in the next month. Finally, sockeyes which is peaking right now. There are other members of the family which we should also explore. Arctic Char and Steelhead trout being a couple. I will talk more about this in the future but suffice it to say that claiming one is better that the other is subjective. I, personally, believe that good farms produce great fish but when wild is around, we should be feasting on that. So we will be doing a little back and forth throughout the summer and early fall.

As I said on Monday, we are going North with a lot of seafood. Beautiful swordfish from eastern Canada, dry sea scallops from Lightship area off of Nantucket and oysters from their neighbors in Wellfleet. Last but not least, lobster meat!!!! Cooked claw and knuckle meat for a beautiful weekend to come.
