 GOOD MORNING EVERYONE!!

First of all, thank you for the touching response to my email yesterday. So many of you returned the gesture and shared something personal about family and your relationship with food. I was near puddles myself a few times. I sincerely appreciate that you decided to take the time to write back. We are part of an amazing community, indeed.

So. Lobster! Yay!! The first of the items will be 4oz Canadian lobster tails. These come from the americanus species whish is the one we know with the claws. Not the spiny lobster from warmer waters. We will be packaging them in bags of 2 each and selling them for $20. They come frozen and raw as most shellfish come. 

Second is lobster meat. This is fresh cooked lobster meat coming from one of our favorite suppliers in Nova Scotia. This is the claw and knuckle which happens to be the most flavorful part anyway. The price is a little more that it was during the summer but back them they were practically giving away lobsters. Not anymore. The price on live lobsters is way up. Just to give you a comparison on pricing, whole live lobsters yield about 20% meat. Meaning, if you bought 5lbs of, lobsters you would only yield one pound of meat. Therefore, and here is the math made simple part, at $10lb for whole lobster, 5lbs would cost $50. If you only got one pound of meat, the 1 pound would cost you $50. Well, the price on lobsters is even more than $10lb. We are selling lobster meat at $40lb. That's a good deal. Considering you can make at least 4 lobster rolls, that would come out to $10 a lobster roll. Cheaper than a resto, for sure. We have a great recipe at smallworldseafood.com for lobster rolls. 

Third, lobster stock. This is a stock that can be made at home using lobster shells but who wants to do all that work? Rouge has prepared this beautiful stock that can serve as a base for bisque or a delicious lobster sauce or even lobster pasta. Here is a good recipe for that.

For a fish of the week, we will also be featuring Striped Bass fillet. Why not end the year on a high note, right? This beautiful fish from Maryland is one of the kings of our local waters. Fresh and freezable, this shouldn't be passed up.

For other menu notes, clams are here this week. Clams for New year's? I think we need to make space for another set of 7 fishes. Bay scallops are around this week. Yay!! Oysters will be the crowd favorite Pickle Points from PEI. Big robust flavor there. Added to the smoked fish list is another shot of Spence Scottish style smoked salmon. 

One last thing we are adding is a shrimp/crab boil spice blend. This is a blend used by many fine restaurants in place of Old Bay. It is similar but better, we think. 8oz container for $3? That's a pretty good price.
